This recipe for Chicken Fried Rice is taste better than take out fried rice. It is easily made in a skillet for an easy one pot meal. This Chicken Fried Rice has so much flavor and loaded with chicken. One of our favorite rice bowl recipes. It is my go-to meal as you can serve it by itself or it compliments many Asian inspired dishes. My family loves this chicken fried rice recipe.
This recipe is PERFECT! I added a yellow bell pepper to saute with the chicken once it was halfway cooked. For a slight zip at the end I also added a tablespoon of Ponszu.

How to Make Chicken Fried Rice
Step 1 – In a large skillet or wok over medium high heat on the stovetop, sauté the chicken in the sesame, vegetable oil, kosher salt and black pepper or white pepper. This only takes a few minutes so it is super fast and easy.

Step 2 – Put the chicken aside on a separate plate once this is cooked.
Step 3 – Add the carrots and peas to the pan and saute. Push them to one side of the pan so you will have room to scramble the eggs.

Step 4 – Now it is time to add all that delicious chicken back to the skillet to stir fry. Add the day-old rice and seasonings and stir to combine.

Step 5 – This is a really simple dinner idea and only one pan to clean.

Easy Chicken Fried Rice
Ingredients
- 2 boneless skinless chicken breasts (diced)
- 2 tablespoon sesame oil
- 2 tablespoon vegetable oil
- 1 cup frozen peas and diced carrots blend
- 3 larges eggs (lightly beaten)
- 4 cups cooked rice
- 3 tablespoon soy sauce
- ½ teaspoon salt
- 1 teaspoon pepper
- 3 green onions (sliced)

Instructions
- Heat 2 tablespoons sesame oil and 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 diced boneless skinless chicken breasts and cook for 4–6 minutes until fully cooked. Remove the chicken and set aside.
- Add 1 cup frozen peas and carrots to the skillet and sauté for about 2 minutes.
- Push the vegetables to one side of the pan and pour in 3 lightly beaten eggs on the empty side. Scramble the eggs until cooked.
- Return the chicken to the pan, then add 4 cups cooked rice, 3 tablespoons soy sauce, ½ teaspoon salt, and 1 teaspoon black pepper.
- Stir and sauté for 3–5 minutes until everything is heated through.
- Top with 3 sliced green onions and serve immediately. Enjoy!

- Use Different Oil – You can easily use avocado oil, canola oil or coconut oil instead of the vegetable oil in this recipe.
- Pre Cooked Rice is Best – This fried rice recipe is best to made with cold rice and is the secret ingredient. I usually use leftover rice and it’s makes the best fried rice.
- Change the Protein – You can change the protein to salmon, shrimp, pork are all great option.
- Gluten Free – If you want to make this gluten free, use a gluten free soy sauce.
- Make Low carb – for a lower carb options, use cauliflower rice.
Variation Ideas
- Change the Rice – You can use long grain rice, brown rice, cauliflower rice or jasmine rice instead. We have made minute rice and it still turned out delicioius.
- Use Different Vegetables – You can add in mushrooms, snow peas, broccoli, bell peppers and water chestnuts.
- Add in Nuts – Add in chopped peanuts or cashews for some crunch. We also like adding in toasted sesame seeds.
- Remove the chicken – You can also eat this fried rice without any chicken. It will taste amazing.
- Soy Sauce Substitution – You can substitute dark soy sauce for coconut aminos or tamari.
- Change Meat – Instead of making this chicken use leftover ham, steak, or ground beef.
- Spices – The addition of 1 teaspoon of Mince Garlic Cloves is a great idea. You can also add in garlic powder if you do not have fresh garlic.

We have added in chopped broccoli, asparagus and zucchini. Keep in mind that different vegetables might take longer to cook, so adjust your time accordingly.
The secret to making great fried rice is using leftover cold rice. We eat rice a lot so I always seem to have some leftover. But if I know I am going to make this recipe and do not have an rice, I make a batch of rice the night before and place in the refrigerator.
No, fried rice is not unhealthy. It is great recipe to add more veggies if you wanted to and more protein. You can also use brown rice and change the soy sauce to coconut aminos for reduce the soy.
If you are worried about the carbs, try using cauliflower rice instead. This is a great substitute for rice.

I’m guessing you could also used (drained) canned chicken as well? I HATE cooking raw chicken unless I bake it, but if I want to add chicken quickly to a recipe, I’ll just crack open a 12.5 oz can of cooked chicken, chop it up and dump it in my dish.

My Mom always made a PORK TENDERLOIN when my Dad returned from a long business trip. The pork, the mashed potatoes, the gravy, and even the green beans made our day. I must say, the pork tenderloin was also a big hit when the Saudi consulate arrived in the country. He said to my Dad, do you think Edna would make that meal for me? Super easy just as described in the title. Several ate seconds. I saved a little time by crockpotting 2 chicken breasts. I will add garlic next time for another layer of fun. I was surprised that an onion wasn’t on your list. In Habachi restaurants they always cut one up after making the volcano,lol. It adds a little crunch and taste. I velvet my chicken a couple hours ahead also.

Made this several times I’m making it today using what veggies I have I usually have to cook the rice but it’s worth it great recipe.
I just subscribed. I have one of my 10-year-old granddaughters over this weekend. I asked her what she wanted to eat and she asked, “Nana, do you have any chicken fried rice?” Well, of course I didn’t, so I came online to see if I could find a quick and easy recipe. And I found you! I happened to have pre-cooked grilled chicken in the freezer, cans of peas and carrots, and exactly 3 cups of pre-cooked rice (that I was saving to use with chicken pot pie). I have green onion but she doesn’t like those so I left them out. I used 4 tablespoons of olive oil (didn’t have sesame oil) and I had 2 tablespoons of coconut aminos (soy sauce) so I used 1 tablespoon of teriyaki sauce in place of the 3rd tablespoon of coconut aminos. I also put about a tablespoon of spicy teriyaki sauce in there. This is now a favorite! I had to bribe her with chocolate ice cream to keep her from eating it all tonight! I’m going to get all the right ingredients and make it exactly like you do and try that, too! Thank you!
