Easy Chicken Stir Fry Recipe

This recipe is the result of me throwing stuff together one night for dinner. I was actually going to make something else and didn’t have all the ingredients.

Next thing I know, this Easy Chicken Stir Fry Recipe was born and it was so tasty!  Even better, this skillet recipe is very frugal.

The entire dish has a really good flavor with the blend of soy sauce and Italian dressing. The chicken is so flavorful.

The bell peppers not only give the dish such a gorgeous burst of color but they are so tasty. Your family will go crazy over this easy meal.

What can you serve with this Chicken and Peppers Stir Fry?

We love to serve the chicken and peppers over rice. In fact, I have a little tip for you to make dinner time even faster.

Learn how to freeze rice and you can make this meal even easier. I love to grab the rice from the freezer in the morning and when we come home it is all ready to reheat and serve.

We do this for lots of meals and it helps put together a quick meal. This saves a ton of time so I would definitely recommend doing this.

Another idea is to serve the chicken mixture in tortilla shells. This is so tasty and makes a really good fajita style filling for tacos.

The chicken stir fry marinade is so flavorful.

You are going to gobble this marinade up. I like to spoon extra over the rice because it is that amazing.

Can I make this healthy chicken stir fry low carb?

Sure! If you are trying to reduce your carb intake, just omit the rice or tortilla shells.

Eat the chicken and bell peppers by themselves. This is a great way to cook once but meet the needs of the entire family.

We love meals that are easy and everyone can enjoy. This really helps during crazy nights when everyone is running from activities.

How do I make Stir Fry Chicken and Vegetables?

In a small bowl, whisk together the cornstarch, chicken broth, soy sauce and honey. Then set aside.

Heat 1 tablespoon of the olive oil to a large skillet over medium high heat.

Then add the chicken and season it with salt and pepper. Sauté the chicken for 3-5 minutes until browned and cooked through. Then remove from the skillet to a separate plate.

Reduce the heat to medium high heat and add the rest of the olive oil to the sauce pan. Then add in the veggies (broccoli, bell peppers and carrots). Cook, stirring occasionally, and cook until tender but still crispy. Then stir in the ginger and garlic and cook for 1-2 minutes until the garlic is aromatic.

Then add the chicken back to the skillet. Stir in the stir fry sauce and stir to coat the chicken and vegetables with the sauce.

Bring the mixture to a boil, stirring occasionally, and let the mixture boil for 1 minute to thicken the sauce.

Top with sesame and serve as is or over rice. Then enjoy!

Tip for making stir fry recipe chicken.

This recipe calls for bell peppers and I actually keep these in the freezer. This is one of the ways I meal prep and it makes meal time so much easier.

I love being able to grab the sliced bell peppers from the freezer for this stir fry dish and other recipes. It really helps make cooking dinner on busy weeknights much easier.

I also keep diced onions and peppers in the freezer for recipes as well. Learn and  how to freeze onions and also how to freeze peppers to save so much time in the kitchen!

You can also add the garlic if you want a little more to the sauce. We also like to sometimes add crushed red pepper for a little heat.

The chicken is really good sauteed in sesame oil for another idea. Also, if your sauce needs to be thickened, you can use corn starch and chicken broth and whisk into the stir fry sauce.

It is a great recipe and I know your family will love it.
