What is Chicken Cordon Bleu?

The reason that we call Chicken Cordon Bleu because Cordon bleu translate to Blue Ribbon Chicken. We couldn’t agree more. This instant pot chicken is so tender and come out so flavorful and juicy.

We love that this chicken can be made into your own recipe. It is traditionally made with slice of ham and swiss cheese, but we have gotten creative with this recipe and used different cheeses and seasoning.

Instant Pot Recommendation:

I am using an 8 quart Instant pot but you can use a 6 quart. I personally have an Instant Pot and so far I am loving it. You can find the Instant pot on sale here.  It’s really changed dinner time around here.

I can take a frozen meal that I have prepared and place it in the instant pot. Within about 25 minutes or less dinner will be ready.

Ingredients for Instant Pot Chicken Cordon Bleu

  • Boneless Skinless Chicken Breasts Fillet
  • Cream of Chicken Soup
  • Milk
  • Water
  • Pepper
  • Salt
  • Minced Garlic
  • Ham Slices
  • Sliced Swiss Cheese
  • Cornbread Stove-Top® Stuffing
  • Butter, melted

How to Make Instant Pot Chicken Cordon Bleu:

  • Combine Ingredients – In a small bowl, whisk together the cream of chicken soup, water, milk, salt, pepper and garlic until smooth. Set aside.
  • Add Chicken to Instant Pot – Place the chicken breasts at the bottom of the instant pot.
  • Place Ham over Chicken – Add the ham over the chicken in an even layer.
  • Add the Cheese – Top with the cheese.
  • Pour the Soup Ingredients in the Instant Pot – Pour over the soup mixture and use a spatula to spread it out evenly.
  • Add Cornbread Mixture – Sprinkle over the cornbread stuffing mix.
  • Top with Melted Butter – Pour over the butter evenly over the stuffing.
  • Close the Instant Pot and seal – Add the lid and set the valve to sealing.
  • Pressure Cook – Set the pressure for 25 minutes.
  • Quick Release – Do a quick release to release the pressure.

Instant Pot Chicken Cordon Bleu Tips:

  • Crispy Breading – If you prefer to have crispy breading, you can sear the chicken on each side in the instant pot if you prefer. You may need to reduce the cooking time about 2 minutes if you plan on searing the chicken.
  • High Pressure – With any type of instant pot you use, cook on high pressure for about 25 minutes.
  • Use other cheeses – Use provolone cheese instead of swiss cheese. We have also used sliced of cheddar cheese or grated cheese. The slice cheese provides a thicker layer but the grated cheese melts into the chicken.
  • Gluten Free – To make this recipe gluten free, you can use gluten free bread crumbs.
  • Liquid – If you prefer a gravy to go over the top of the chicken cordon bleu, you can saute the remaining liquid with some cornstarch. If there is any much liquid left, add a little.

How to know when Chicken is done:

When we cook meat we always rely on a meat thermometer to ensure that it is cook thoroughly. Because chicken cordon bleu has layers of ingredients, be sure that you are just checking the internal temperature of the chicken.

The reading of the meat thermometer should have a reading of 160 degrees to 165 degrees. Using a meat thermometer allows you to check for doneness without slicing into the chicken.

  • Use other cheeses – Use provolone cheese instead of swiss cheese. We have also used sliced of cheddar cheese or grated cheese. The slice cheese provides a thicker layer but the grated cheese melts into the chicken.
  • Change the Meat – Instead of Ham use prosciutto in this recipe. You can also use black forest ham or smoked ham. We have used smoked bacon as alternative.
  • Chicken – We usually filet our chicken to make thinner, evenly pieces. But they also have thin slices of chicken that you can get at the store. This might save you time from pounding your chicken thin.
  • Cornbread Options – We like using cornbread as the breading for this recipe. Instead of cornbread mix, use a season blend of oregano, garlic powder and onion powder.
  • Add a Sauce – Some recipes call for a sauce to top with the chicken cordon bleu. This is optional but it would be great for dipping. Dijon Mustard mixed with mayonnaise makes a great sauce.

    I cook this on high pressure for 25 minutes with a quick release. You can use frozen chicken breasts but that might take longer to cook through. I correct the salt amount in the recipe – thanks for letting me know.

    25mins send an awfully long time for chicken breasts. Should this be done on low pressure? Or maybe use frozen chicken? Also, the directions mention salt but salt isn’t listed in the ingredients

    The milk, water and cream of soup mixture was enough liquid for my pressure cooker to come to pressure. If yours is not coming to pressure, I would add another cup of water or chicken broth to the pressure cooker. Thank you!

    Make sure you put the liquid at the bottom of the Instant pot. That will prevent the burn notice.

    I followed the recipe to the letter but still got a burn notice and everything was stuck to the bottom of the pot. Did I miss a step?
