Tamale pie has always been one of my favorite comfort food recipes because it reminds me of potlucks and family dinners! I love the way the spiced beef filling bubbles up beneath that golden cornbread crust, for a delicious casserole recipe that is cozy and flavorful.

Every time I make it, it brings back those warm, homey feelings, and I love that itโ€™s just as good for busy weeknights as it is for sharing with a crowd.

Ingredients

  • Ground Beef – We used lean ground beef
  • Vegetables – Diced onion, red bell pepper and green bell pepper for added flavor

  • Diced Tomatoes – I like using a can of Rotel with green chiles
  • Whole Kernel Corn – Use can corn, drained
  • Black Beans – Drained and rinsed
  • Shredded Cheddar Cheese – Use freshly shredded cheese. Monterey Jack is a great addition
  • Cornbread Crust – You can easily use a homemade cornbread recipe instead of the jiffy cornbread mixes if you prefer.

How to Make Tamale Pie

Step 1 – Preheat oven 375 degrees F. Spray a 9X13 baking pan with non-stick cooking spray and set aside.

Step 2 – Heat a large skillet or Dutch oven over medium high heat. Add the ground beef and cook until browned, breaking it up as it cooks.

Step 3 – Stir in the bell peppers, onions , cumin , chili powder and salt. Cook for 3-4 minutes until the peppers start to soften. Drain off any excess grease if needed.

Step 4 – Stir in the tomatoes, chillies, beans, corn and water. Heat for a few minutes until heated through.

Step 5 – Stir in the shredded cheese.

Step 7 – In a large bowl, stir together the Jiffy corn mixes, eggs, milk and melted butter until combined.
