- Potatoes – We used russet potatoes but you can also use Yukon Gold Potatoes or Red potatoes
- Frozen Mixed Vegetables with Green Beans – Add in other veggies such as shredded carrot, celery and corn
- Diced Tomatoes – You can also use a can of Rotel
- Beef Broth – We used low sodium beef broth or you can also use water

How to Make Slow Cooker Vegetable Soup
- Step 1 – If using ground beef or turkey, cook meat and onions until golden brown.
- Step 2 – Add to slow cooker along with all other ingredients.

- Step 3 – Cover and Cook on low for 4 hours. You can also add Italian seasoning if you prefer.
- Step 4 – Serve hot and enjoy! Salt and pepper to taste.

Instructions
- In a 6?quart crock pot, combine 2 pounds ground beef (browned and drained), ½ medium onion (diced), 3 potatoes (peeled and diced into 1?inch pieces), 16 oz frozen mixed vegetables, 3 cans diced tomatoes (14.5 oz each, not drained), 4 cups beef broth, 2 teaspoons Italian seasoning, 1 teaspoon salt, and ½ teaspoon pepper.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- Serve hot and enjoy!




I made this for the first time last fall after craving both a tomato-based soup I could make with leftover ground beef and an easy slow cooker soup. YOU HAD ME AT “FROZEN VEGETABLES”.
Fast forward 6 months – I made this soup EVERY.SINGLE.WEEK this winter. Sometimes twice per week. Seriously.
I love the way the flavors come together.
I love that I can change up the ingredients and still have a winner every time.
I love that I can make and clean up in less than 30 minutes (shout out to slow cooker liners for making this even easier).
I love that it’s VERY AFFORDABLE.
I made some adjustments and have some recommendations:
1. COOK THE POTATOES AFTER DICING/BEFORE CROCK POT. Even if it’s only for a few minutes in the microwave. Make sure they’re fork tender or close to it before putting in the crock pot.
This is how I now prepare them: Pre-heat the oven, peel & dice potatoes, toss in olive oil & seasoning (I use Retchless Rub Greek seasoning*), spread flat on sheet pan, bake for however long it takes to make the rest of the recipe, toss in crock pot. I don’t set a timer. I have found this timing to work perfectly.
1A. USE SWEET POTATOES. You’ll thank me later.
2. SAUTEE ONION BEFORE ADDING BEEF TO PAN. I also add a little minced garlic. Sauteeing the onion and then adding the beef adds a nice flavor.
2A. ADD SEASONING TO BEEF (& ONION) IN PAN. I used Retchless Rub Fiesta Seasoning*.
3. MIX UP THE CANNED TOMATOES. I found 2x cans roasted diced tomatoes & 1x can diced tomatoes w/green chilies to be a winning combo that added flavor without heat.
4. ADD MORE SEASONING TO CROCKPOT. I used Retchless Rub Monster Burger seasoning*. I didn’t measure any of my seasonings but I never found the recipe to be over or under seasoned after I added different seasonings at each step.
5. PICK UP A LOAF OF ITALIAN BREAD, RICOTTA & PESTO. Slice the bread, spread ricotta & pesto on top. Toast for a few minutes. Serve warm. Runner up: Boursin cheese.
6. ADD SHREDDED CHEESE AS GARNISH. Any kind of shredded cheese. We ran the gamut of cheese this winter. No losers. Only winners.
Easy recipe. Great flavor. Lots of options for variety. We never had a bad batch. It was a hit every time (#1 was an important part of success)

This was easy and so delicious with just a few tweaks. As septuagenarians with taste buds that need to be awakened at every meal, we looked to the extended notes for inspiration. We added garlic as suggested. Then, to boost the broth’s flavor, we decided to add red pepper flakes before cooking. Perfection!
