  • 3 Tablespoons Sugar
  • 2 Cups All-Purpose Flour
  • 3 Teaspoons Baking Powder
  • ½ Teaspoon Salt
  • 1 ½ Cups Milk
  • 2 – 4 tablespoons Melted Butter
  • 2 Eggs
  • 1 Teaspoon Vanilla

First, preheat your oven to 350 degrees. Spray a 9×13 baking dish with a non stick spray of your choice.  I love using my pyrex baking dish (they have some on sale here).

Next in a medium bowl whisk together the dry ingredients (sugar, flour, baking powder, and salt).

Then in a separate large bowl, whisk together the milk, eggs and melted butter.  Then stir the flour mixture into the milk mixture, just until combined. The batter will be a bit lumpy.

Pour the batter into the prepared pan and bake for 25-30 minutes, until edges are golden brown and a toothpick inserted in the center comes out clean.

Allow it to cool for about 5 minutes, then cut into squares and serve with your favorite toppings.

We like to top these delicious baked pancakes with confectioners sugar, or even maple syrup.

Also, I love serving this for breakfast with this easy tropical fruit salad recipe.  I like to make the fruit salad while the pancakes are cooking in the oven.  Then when they’re done, I have a delicious meal ready for my family!

    Just made this for the kids tomorrow morning. Used 1 cup of wholemeal flour and 1 cup of white flour and it tastes amazing. Will serve with greek yoghurt, maple syrup and berries – they are going to love it. Thank you for the great recipe.
