I love the convenience of baking pancakes over making them the traditional way. This process is easier when you have to make a lot of pancakes for a family get together or party.
Also, you don’t have to monitor the cooking pancakes as closely as when you prepare them on a griddle or a cast iron skillet like when I have made dutch baby pancakes.
No flipping pancakes is required with this baked pancakes recipe! I love that I can throw these in the oven in the morning (which usually takes less than 15 minutes) and pancakes are ready for me to enjoy after I finish getting ready for the day.
Breakfast can be stressful, but not with this easy Baked Pancakes recipe.
Seriously though… whether you have no kids or 8 kids (like me), you are going to love this super easy recipe. Just mix, dump, bake and enjoy.
This is much easier than the traditional pancakes recipe where you have to stay in the kitchen watching and flipping. In fact, my family prefers these baked pancakes over traditional pancakes, and since these are so darn easy – I am thankful they love them so much.
Since my family is so large (and because they love them so much, we usually make two batches). If we have left overs, then they love to eat them for a snack later in the day.
Oven baked pancakes ingredients:
- 3 Tablespoons Sugar
- 2 Cups All-Purpose Flour
- 3 Teaspoons Baking Powder
- ½ Teaspoon Salt
- 1 ½ Cups Milk
- 2 – 4 tablespoons Melted Butter
- 2 Eggs
- 1 Teaspoon Vanilla
Making pancakes from scratch can be intimidating but I promise this recipe is not overly complicated. Now that you have all the ingredients, let’s continue to learn how to bake pancakes in the oven.
How to make baked pancakes:
Next in a medium bowl whisk together the dry ingredients (sugar, flour, baking powder, and salt).
Then in a separate large bowl, whisk together the milk, eggs and melted butter. Then stir the flour mixture into the milk mixture, just until combined. The batter will be a bit lumpy.
Pour the batter into the prepared pan and bake for 25-30 minutes, until edges are golden brown and a toothpick inserted in the center comes out clean.
Allow it to cool for about 5 minutes, then cut into squares and serve with your favorite toppings.

We like to top these delicious baked pancakes with confectioners sugar, or even maple syrup.

Oh… and you can add in ingredients to make it your own. We have made pumpkin baked pancakes, and we have even added in cocoa mix instead of some of the flour to make chocolate pancakes or even just mixed in some chocolate chips before baking.
Also, this recipe would be amazing with blueberries or lemon juice mixed into the batter before baking. In addition, you could use brown sugar instead of the regular sugar for a completely different flavor on these oven baked pancakes.

You can easily swap out the flour for whole wheat flour and the milk for low-fat milk for a healthier option for these delicious baked pancakes.
My kids usually can’t tell when I use wheat flour instead and this makes the baked pancakes higher in fiber so the pancakes are more filling and you stay fuller longer with this variation.
