These fluffy Greek yogurt pancakes aren’t your standard pancakes. In fact, even my pickiest eater said this recipe was the best pancakes he had eaten. That is pretty amazing!

Yogurt has become a fridge staple in our family. From breakfast, to lunches, to an after school snack our family enjoys yogurt anytime of day. You may even like this Crockpot Yogurt to make your favorite snack at homemade.

Why Make Pancakes with Greek Yogurt?

Greek Yogurt is a great addition to pancakes because it is easy way to add in protein and flavor. It gives pancakes an extra fluffy and soft texture that the entire family will love.

You can still customize these pancakes with your favorite additions, sweetness or toppings for the perfect breakfast recipe! This healthy pancake recipe is a delicious twist on a classic pancake recipe.

Ingredients, Greek Yogurt, butter, flour, eggs, baking powder, and milk
  • Large Eggs – Helps to bind the ingredients together
  • Milk – You can use any type of milk
  • Greek yogurt – See Substitutes for Greek Yogurt
  • Baking Powder – Leavening agent. You can also use baking soda
  • All Purpose Flour – Gives the pancakes the perfect texture
  • Butter – We used unsalted butter

How to Make Greek Yogurt Pancakes

  • Step 1 – Add the eggs and milk and stir together in a large bowl with a spoon.
  • Step 2 – Add the Greek yogurt and whisk until everything is combined well and you don’t see any lumps.
  • Step 3 – In a separate medium bowl, add the baking powder with the flour. Then pour the dry ingredients into the wet ingredients.
  • Step 4 – Make sure everything is mixed together really good. If the batter is too thick then add in milk by one tablespoon at a time until it gets to the consistency you prefer.
  • Step 5 – Get your griddle or pan ready. Add the butter and melt to coat the pan over medium heat. You can also use coconut oil or nonstick cooking spray.
  • Step 6 – Start making the pancakes by pouring ¼ cup of the batter onto the pan.
  • Step 7 – Let the pancakes cook for about 2 min until golden brown and bubbles form. Then flip with a spatula and cook another 2 minutes.

Recipe Tips

  • Pancake Batter Consistency – If the pancake batter is to thick, you can add in a splash of milk to make it thinner.
  • Combining Ingredients – We recommend using a whisk to combine the ingredients. But overmixing can cause your pancakes to be dry. This helps to prevent lumps in the batter and to ensure that everything is combined completely. Make sure to use a measuring cup to measure the flour so the right amount is added.
  • Batches – You may need to work in batches depending on how big the pancakes you make. We like to pour about ¼ cup of batter into a hot pan so they are about the same size.

Variations and Add-Ins Ideas

Now this is one easy recipe that you can make several ways. Try a few of these variations to make your own special greek yogurt pancakes:

  • Add in frozen blueberries or other fresh berries with a teaspoon salt for added flavor
  • Substitute different flavor or Light & Fit Greek yogurt
  • Add in ¼ cup of chocolate chips with a teaspoon vanilla extract and cinnamon for delicious taste
  • Top with pecans or walnuts, warm butter, and syrup
  • Mix in ⅛ cup of peanut butter
  • Use plain Greek yogurt instead of flavored.
  • Substitute with all purpose flour with whole wheat flour or oat flour
  • Add in sprinkles to celebrate a birthday

You can even substitute one container of greek yogurt for a container of Dannon Activia. It is also a family favorite. Personally I loved the Strawberry Activia in the pancakes.

How to Freeze Pancakes

The trick to a quick morning is making triple or quadruple patches of pancakes. Then freezing them. That way during the week in the mornings all you have to do is heat up a pancake and breakfast is done!

  • Make pancakes according to directions.
  • Allow the pancakes to cool completely or to room temperature.
  • Place the pancakes on a baking sheet in a single layer and freeze until frozen solid.
  • Place the frozen pancakes in a gallon size freezer bags and in the freezer until ready to use.

When you are ready to eat simply place 1-3 pancakes straight from the freezer on a microwave safe plate and microwave in 30 second intervals until heated through.

      It just depends on how big you make your pancakes. The entire recipe serves 4 when I made this, my batter made 8 pancakes so each serving would be 2 pancakes. Thanks!
