  • Bacon – These can easily be made with browned breakfast sausage or dice ham instead of the bacon if you prefer. 
  • Eggs – Use the whole eggs or you can make with just egg whites
  • Simple Seasoning – Salt and Black Pepper – Add other spices that you prefer
  • Shredded Cheddar Cheese – Use freshly shredded cheese for the best flavor
  • Flour Tortillas – We have used Burrito Size, gluten-free or whole wheat tortillas. You can use corn tortillas but they might be to small

How to Make Breakfast Quesadillas

Step 1 – Heat a large skillet over medium heat. Add the bacon and cook until crispy.

Step 2 – Remove from the pan to a plate lined with paper towels to soak up the excess grease.

Step 3 – Remove some of the grease from the pan (but not all). You can also cook in butter if you prefer.

Step 4 – Crack the eggs into a mixing bowl. Add a small amount of water, salt and pepper. Whisk until combined.

Step 5 – Pour the eggs to the skillet. Cook over medium high heat, scrambling the eggs until they are cooked to the doneness that you prefer. Remove from heat.

Step 6 – Chop the cooked bacon and stir it into the scrambled eggs.

Step 7 – Sprinkle half of each of the flour tortillas with a thin layer of shredded cheese.

Step 8 – Top evenly with the eggs and bacon mixture. Then top with another layer of shredded cheese.

Step 9 – Fold each of the tortillas in half to form a half moon shape.

Step 10 – Heat a large skillet. Place quesadillas onto the pan and cook for about 2-3 minutes or until cheese melt. Then flip and continue cooking for about 1-2 minutes.

Step 11 – Remove from the pan. Let rest for 5-10 minutes. Slice into 4 pieces and then it’s ready to serve with salsa and enjoy!

  • Cooking Quesadillas – You can prepare the quesadillas on the griddle or pan if you prefer but make sure you work quickly so that the tortillas don’t brown too quickly. 
  • Cook in Batches – You may have to cook the quesadillas in batches depending on the size of your pan or griddle. 
  • Don’t Overfill – A packed quesadilla oozes out the sides. Fill to about ½ inch border keeps fillings contained.
