Make a boxed cake mix taste homemade. Add an extra egg, use milk instead of water, and swap melted butter for the oil. It makes the cake richer and more moist, and no one will guess it came from a box.
Don’t overbake. Start checking a few minutes before the timer goes off. The cake is done when a toothpick in the center comes out clean or with a few moist crumbs.
Let it cool before frosting. Frosting melts and slides right off a warm cake. Let layer cakes cool completely, but poke cakes and sheet cakes with a pour-over icing are meant to be topped while warm.
Store and freeze. Most cakes keep covered at room temperature for 2–3 days. Cakes with cream cheese frosting, whipped topping, or pudding go in the fridge. To freeze, wrap unfrosted cake layers tightly in plastic wrap and foil for up to 3 months, then thaw on the counter before frosting.
