Ingredients

- Butter – You can use unsalted butter
- Cream Cheese – We like to softened to room temperature to easily blend into the mixture
- Whole Kernel Corn – Use canned corn but you can also use frozen corn or fresh corn on the cob
- Green Chilies – For a spicy taste use diced jalapenos
- Shredded Cheese – Any type of cheese would be delicious in this recipe. I love using cheddar cheese but Colby Jack or Monterey Jack cheese would be delicious in the recipe as well.

How to Make Cheesy Corn Recipe

Step 1 – Add the butter, cream cheese, drained corn, green chilies, pepper and salt to a small saucepan. Heat over medium-high heat, stirring occasionally until the cheese is melted and combined.

Step 2 – Reduce the heat to low and stir in the cheddar cheese. Watch closely and simmer just until the cheese is melted and smooth. Remove from heat, let it rest for about 5 minutes and then it’s ready to serve and enjoy!

- 8 ounces Cream Cheese
- 2 cans Whole Kernel Corn 15 ounces each, drained
- 1 can Green Chilies approximately 4 ounces
- ¼ teaspoon Pepper
- ½ teaspoon Salt

Helpful Tips
- Using Frozen Corn – You can use frozen corn in this recipe but make sure that you thaw and cook the frozen corn before using in this recipe so that it doesn’t add extra moisture to this corn.
- Using Fresh Corn – You can use fresh corn if you prefer. When using fresh, remove it from the cob and then it can be added to the pot right away but it will take longer to cook through. You can also cook the corn on the cob, remove the corn kernels and then add it in for this recipe.

- Mexican Cheesy Corn – Add chili powder, lime juice, onions, and Cotija cheese for a delicious variations.
- Bacon Cheddar Corn – Mix in crumbled bacon for smoky flavor. We even like to add a handful of chopped bacon right before serving.
