Ingredients - Roll Oats, Cottage Cheese, flax seed, eggs, olive oil, baking powder, salt
  • Old Fashioned Roll Oats – I wouldn’t recommend using quick oats as the texture of the bread could change.
  • Cottage Cheese – Full fat cottage cheese works the best in this recipe for the best flavor and consistency of the bread. But you can also use low fat.
  • Ground Flax Seed – You can also use Chia Seeds
  • Eggs – We used the whole eggs including the egg whites
  • Olive Oil – Any oil will work in this recipe.

How to Make Cottage Cheese Bread

  • Step 1 – Preheat the oven to 350 degrees F and line a 9X5 inch loaf pan with parchment paper.

Step 2 – Blend the old fashioned oats in a large food processor or blender until they are a fine powder.

Step 3 – Add in the cottage cheese with the liquid, flax seed, eggs, olive oil, baking powder and salt into the food processor or blender. Blend until combined and smooth.

Step 4 – Pour this dough mixture into a prepared loaf pan and bake for 60-70 minutes until a toothpick inserted into the center of the bread comes out clean.

Step 5 – Allow the bread to cool completely in the pan on a wire rack. Carefully remove the bread from the pan by lifting the parchment paper. Then the bread is ready to slice, serve and enjoy! 

Recipe Tips

  • Prepare Baking Pan – You don’t have to spray the parchment paper. Just pour the batter directly into the pan on top of the parchment paper and it should be easily removed from the pan. 
  • Baking Time – Cooking time will vary depending on the size of the loaf pan and your oven. Make sure to use a toothpick to check the center of the bread to see if the bread is finished baking and the top is golden brown.
  • Cool Bread – Allow the bread to rest after baking and cool completely before slicing the bread.

  • Savory Herb Bread – Add 1 tsp dried herbs (like rosemary or thyme) and sprinkle shredded cheese on top. Italian Seasoning is also a great addition topped with parmesan cheese.
  • Cheddar Cottage Cheese Bread – Stir in ½ cup shredded sharp cheddar before baking.
  • Sweet Version – Skip garlic powder, and add a bit more honey and a sprinkle of cinnamon.
  • Gluten-Free – Substitute with a 1:1 gluten-free flour blend.
