Ingredients:
- Chuck Roast
- Salt
- Pepper
- Dried Oregano
- Garlic Powder
- Olive Oil
- Yellow Onion (diced)
- French Onion Soup
- Beef Broth
- Cornstarch
How to Make Cracker Barrel Roast Beef:
- Step 1 – Pat the roast dry and season it with the salt, pepper, garlic powder and dried oregano.
- Step 2 – Heat the olive oil in a large skillet over medium high heat. Once hot, add the chuck roast and sear the chuck roast for 2-3 minutes per side until browned. Remove the roast from the skillet and place it in a slow cooker.
- Step 3 – Add the diced onions and sauté until the onions are soft (5-7 minutes). Then transfer these ingredients to the slow cooker with the roast.
- Step 4 – Pour the French onion soup and beef broth on top.
- Step 5 – Cover and cook on low for 8-10 hours until the roast is fork tender.
- Step 6 – Remove the roast from the crock pot and shred it with 2 forks.
- Step 7 – Mix the cornstarch with 2 tablespoons of cold water and stir this mixture into the juices in the crock pot. Cover and cook on high until the juices begin to thicken.
- Step 8 – Add the shredded beef back to the crock pot and stir it into the sauce to coat it with the sauce in the crock pot.
- Step 9 – Serve warm with your favorite sides and enjoy!
How to Thicken Gravy:
We like to make cornstarch slurry to thicken the gravy. Mix 2 tablespoons of cornstarch with 2 tablespoons of water and then stir into the gravy. Turn the crock pot on high until the sauce thickens.
Recipe Tips:
- Cook the Roast – You can cook this recipe on high in the crock pot but we prefer it on low as the beef is more tender.
- Sear the Roast – Before placing the roast in the slow cooker, we recommend searing the roast with salt.
- Shred the Roast – Shred the roast on a cutting board and add back to slow cooker.
Variations:
- Roast – You can use an arm roast instead of chuck roast in this recipe if you prefer.
- Change Seasoning – Feel free to change the seasoning. We have even used a onion soup mix packet for added flavor.
