  • Ground Italian Sausage – Adds rich, savory flavor and gives this slow cooker rigatoni its hearty, comforting base. Mild or spicy both work great.

  • Beef Broth – Adds depth and extra savory flavor while providing enough liquid for the pasta to cook perfectly in the crock pot.
  • Mozzarella Cheese – Melts into the pasta for that gooey, cheesy finish everyone loves.
  • Shredded Parmesan Cheese (optional) – Adds a sharp, salty bite that enhances the Italian flavor and makes the dish feel extra special.

How to Make Crock Pot Rigatoni

Raw ground beef in a white skillet is being stirred with a wooden spoon, an essential step for any crock pot Italian sausage rigatoni recipe. A blue and white striped kitchen towel lies beside the pan on a white marble countertop.

Step 1 – In a skillet over medium heat, cook the ground Italian Sausage until brown.

Step 2 – Add the ground sausage to the crock pot. You can add in a little olive oil to prevent your meal from sticking to the crock pot.

Step 4 – Last, add the pasta 30 minutes before serving. It will look very watery but don’t worry the pasta will soak it up. If you prefer you can cook your pasta separately in a large pot. Just cook rigatoni according to package.

Step 5 – Cover and cook the rigatoni until the desired tenderness is reached with the pasta. We cook our pasta al dente.

Step 6 – Stir in the mozzarella cheese until melted. Serve immediately and top with parmesan cheese if desired.

Expert Tips for Perfect Crock Pot Rigatoni

  • Always brown the sausage first for deeper flavor.
  • Add pasta during the last 30 minutes to prevent mushy noodles.
  • Stir once or twice after adding pasta to prevent sticking.
  • If sauce seems thin before pasta is added, don’t worry. The pasta absorbs excess liquid.
  • For extra creaminess, stir in ¼ cup cream cheese before serving.
  • Shred cheese fresh for better melting (pre-shredded contains anti-caking agents).

Variation Ideas

  • Try different types of Meat – Try ground turkey, turkey sausage or ground beef instead and your family will never notice the difference. You could even omit the meat all together and add a  ricotta mixture to this recipe.
  • Add in other vegetables – Add in mushrooms, eggplant or whole tomatoes. These vegetables blend perfectly with the Italian Sausage. Red peppers is also a favorite if I have some to toss in.
  • Use different Pasta – Any type of medium size pasta will work perfectly. Penne or rotini is my personal favorite if I don’t have any rigatoni.
  • Spicy Italian Sausage – You can add in some red pepper flakes. They add a little spice to this recipe.

Storage & Freezer Instructions

  • Fridge – Store leftovers in an airtight container for 3–4 days. The pasta will continue absorbing sauce so add a splash of broth when reheating.
  • Freezer – This dish can be placed in the freezer but for best results, we recommend freezing before adding the pasta. Place the meat sauce in a freezer safe container and freeze for up to 3 months. Thaw in the fridge overnight when ready to reheat.
  • Reheating – Reheat on the stovetop or individual servings in the microwave until heated through.

      1. KH says:

If I want to cook the pasta separately, should I not put in as much broth?

      2. Carrie Barnard says:

Yes, I would use 1 cup of broth instead of 3 if you are cooking the pasta separately.

  4. Megan says:

This was an amazing dish! I made this for myself and 3 friends and all four of us totally enjoyed it. I managed to save a serving to eat later today or tomorrow and I’m willing to bet once the flavors marinate in it’s going to be that much better. I pretty much stuck to the recipe posted but instead of ground Italian sausage I used Hot Italian sausage links and I used the dry Penne pasta I had on hand.

    Thank You!!!!!!

    1. Carrie Barnard says:

YAY! So glad you loved it.

  6. Pamela a Fawcett says:

If I use a jar of marinara sauce, how much and do I still add the broth?
    Thank You

    1. Carrie Barnard says:

I would still add the broth.

  7. Melissa says:

Can I use Marinara sauce instead?

    1. Carrie Barnard says:

      Yes you can.

  8. Sarah says:

Hi! This is currently in the crock pot, and we’re excited. When you put the pasta in for the last 30, is that 30 minutes on high or low?

    Thanks!

    1. Carrie Barnard says:

I normally switch it to high.

  9. Joanne says:

This was delicious but if making for a pot luck I would double the meat. Also the pasta took an hour, not 30 minutes. Overall, good recipe.

  10. Danny says:

Carrie do you drain the diced tomatoes?

    1. Carrie Barnard says:

No, I do not drain the diced tomatoes.

  11. Gabrielle says:

This was so yummy! Even the very picky fiancé went for seconds then said “oh good I’ve got leftovers for lunch.” I followed the recipe to a T except only 1tsp of Italian seasoning. Yummy we will make it again 🙂

  12. taylor cooke says:

How much is in a serving like a cup or more??

    1. Carrie says:

I’m not sure on the extra size of the serving as each batch is slightly different. 1 serving is approximately 1/6 of the entire batch. Thank you!

  13. Lennelle says:

This is a recipe that I keep on hand in my house. I don’t put the cheese in it like it says because everyone doesn’t eat cheese. We put the cheese on top of each serving and mix it in. It’s a very flavorful dish and my family loves it!

  14. Gale Rutledge says:

This was a very easy but good supper. It was a little spicier for my mom, but she still liked it as well. All in all, I will make it again. Thanks for the recipe.

  15. Joanie says:

This recipe sounds so good and easy to make. I can NOT eat ANY diary product, so would have to eliminate the mozzarella cheese. Is there something else I could substitute? I would think that eliminating the cheese would just change the flavor somewhat. Any suggestions?
