How to Make Crock Pot Rigatoni

Step 1 – In a skillet over medium heat, cook the ground Italian Sausage until brown.

Step 2 – Add the ground sausage to the crock pot. You can add in a little olive oil to prevent your meal from sticking to the crock pot.

Step 3 – Next, add in onion, seasonings, diced tomatoes, tomato sauce and broth. Stir to combine. Cover and cook.

Step 4 – Last, add the pasta 30 minutes before serving. It will look very watery but don’t worry the pasta will soak it up. If you prefer you can cook your pasta separately in a large pot. Just cook rigatoni according to package.
Step 5 – Cover and cook the rigatoni until the desired tenderness is reached with the pasta. We cook our pasta al dente.
Step 6 – Stir in the mozzarella cheese until melted. Serve immediately and top with parmesan cheese if desired.

- Always brown the sausage first for deeper flavor.
- Add pasta during the last 30 minutes to prevent mushy noodles.
- Stir once or twice after adding pasta to prevent sticking.
- If sauce seems thin before pasta is added, don’t worry. The pasta absorbs excess liquid.
- For extra creaminess, stir in ¼ cup cream cheese before serving.
- Shred cheese fresh for better melting (pre-shredded contains anti-caking agents).

- Try different types of Meat – Try ground turkey, turkey sausage or ground beef instead and your family will never notice the difference. You could even omit the meat all together and add a ricotta mixture to this recipe.
- Add in other vegetables – Add in mushrooms, eggplant or whole tomatoes. These vegetables blend perfectly with the Italian Sausage. Red peppers is also a favorite if I have some to toss in.
- Use different Pasta – Any type of medium size pasta will work perfectly. Penne or rotini is my personal favorite if I don’t have any rigatoni.
- Spicy Italian Sausage – You can add in some red pepper flakes. They add a little spice to this recipe.

This recipe stays on our regular menu plan rotation because everyone just loves it and it is SO easy to put together.

- Fridge – Store leftovers in an airtight container for 3–4 days. The pasta will continue absorbing sauce so add a splash of broth when reheating.
- Freezer – This dish can be placed in the freezer but for best results, we recommend freezing before adding the pasta. Place the meat sauce in a freezer safe container and freeze for up to 3 months. Thaw in the fridge overnight when ready to reheat.
- Reheating – Reheat on the stovetop or individual servings in the microwave until heated through.

- 1 pound ground Italian Sausage
- 16 oz package of uncooked Rigatoni
- 2 tsp minced garlic
- ½ onion chopped
- 1 – 16 oz can petite diced tomatoes
- 1 – 8 oz can of tomato sauce
- 2 tsp Italian Seasoning
- 1 tsp salt
- 1 tsp pepper
- 3 cups beef broth
- 8 oz shredded mozzarella cheese
- Shredded Parmesan Cheese optional

Instructions
- In a skillet over medium heat, cook 1lb of ground Italian sausage until it is brown. (Or use your Ninja)
- Add to a 6 quart slow cooker.
- Add in ½ an onion (chopped), 2 tsp minced garlic, 2 tsp of Italian seasoning, 1 tsp of salt, 1 tsp of pepper, 1 -16oz can of diced tomatoes, 1 -8oz can of tomato sauce and 3 cups of broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4.
- 30 minutes before serving stir in 16oz package of pasta. It will look very watery but don't worry the pasta will soak it up. Cover and cook for approximately 30 minutes until the desired tenderness is reached.
- Stir in 8 oz of shredded mozzarella cheese until melted.
- Serve immediately and top with parmesan cheese if desired.

Yes, I would use 1 cup of broth instead of 3 if you are cooking the pasta separately.

This was an amazing dish! I made this for myself and 3 friends and all four of us totally enjoyed it. I managed to save a serving to eat later today or tomorrow and I’m willing to bet once the flavors marinate in it’s going to be that much better. I pretty much stuck to the recipe posted but instead of ground Italian sausage I used Hot Italian sausage links and I used the dry Penne pasta I had on hand.

This is a recipe that I keep on hand in my house. I don’t put the cheese in it like it says because everyone doesn’t eat cheese. We put the cheese on top of each serving and mix it in. It’s a very flavorful dish and my family loves it!

This recipe sounds so good and easy to make. I can NOT eat ANY diary product, so would have to eliminate the mozzarella cheese. Is there something else I could substitute? I would think that eliminating the cheese would just change the flavor somewhat. Any suggestions?
