Serving Suggestions

I personally like to serve it with a side salad because that makes dinner done with no extra work. However,  steamed broccoli (see how to steam broccoli in the microwave easily) would also be amazing without any extra work.

Green beans also taste great and make a simple side dish as well. This meal is also good with asparagus.

This oven roasted asparagus is a family favorite and it is very simple and quick to make.

Frequently Asked Questions

How to Freeze Casserole

Now this is an easy freezer meal. However, raw potatoes don’t freeze that great, so I suggest you replace the potatoes with a package of frozen hash browns. Layer just like you would with the hash browns. Cover with foil and freeze.
Then allow it to thaw in your refrigerator overnight and cook according to directions above. If it is still frozen in the middle cook with it covered for 1 ½ hours and then 30 minutes uncovered.

How to Store Leftovers

Store leftovers in an airtight container in the refrigerator for up to 4 days.

How to Reheat Leftovers

Reheat the leftovers in the microwave or in the oven depending on how much you have leftover.

  1. First try with some adjustments, sautéed inions and garlic, made from scratch cream chicken soup, cheddar cheese soup. Have to say this was so tasty it has become my newest favorite hot dish. Will make again and again. Thank you for sharing.

I have prepared your beef & potato casserole several times. Since there is just myself & my husband I cut the recipe in half.
    It is fabulous! Thank you!

  3. All of these seem very easy and well thought out. We are going to try one tonight

I cubed my potatoes because I find slices stick together making it difficult to get the sauce distributed. I made my own cream of mushroom soup adding a tbsp of Better than Bouillon chicken and fried my potatoes before adding. This allowed me to season them and bake for 35 minutes which works out much better for me. May sound like a lot of changes but the character of the recipe remains the same. Good recipe and I’ll be making frequently.

Just made this for my family and they loved it!! I added onions in with the beef and then subbed one can of cream of mushroom for tomato paste. It gave it the perfect “cheeseburger with ketchup” flavor!!

  7. 5 stars
I made this last night. Thank you for the idea. I added cottage cheese to the layers and made my own soup base (allergies to the ingredients in cream of mushroom soup).

  8. 5 stars
After reading the comments, I added some onion flakes and a little garlic powder. Also I used xtra sharp cheddar. Absolutely delicious! Adding this to a monthly rotation.

  9. I want to know can you peel and dice the potatoes, and preboil them, until almost done add everything in casserole and bake 30 minutes or so instead of icing potatoes. I don’t have that slicer thing and my slices aren’t thin and even to cook well

  10. I added a chopped onion to the hamburger. I’m considering a sm can of chopped mushrooms next time. Thank you for the idea and the recipe

  11. Has anyone added some Rotel, or chunky salsa to the mushroom soup mix to spice it up a bit? That’s what I’m thinking of doing.

  12. 5 stars
This is easy and so delicious. The only change I added : French’s fried onion rings in the layer under the cheese. This is a very tasty, easy to make, easy o the budget dish. You have to try it.

  13. I have been making hamburger casseroles for years
I like to add to the flavor by adding things like potatoes, mushrooms and sometimes green peppers. I have also tried noodles and rice.

  14. I have made a similar casserole for 20ys. This is a quick satisfying meal I use hash browns, sour cream, cheese, cream soup & French onions for the topping No recipe needed

  15. Was looking for a quick and easy hamburger casserole for my guys. This recipe is a perfect canvas to kick it up with your own seasonings too! I love the idea that you can make one up to give to a new Mom or someone going through bereavement etc. and they can bake it as needed. Thanks for sharing!

  16. I made this in my Aurora Insta pot and it was awesome. I shared some with my neighbors and she wanted the recipe too.

  17. 5 stars
This was very tasty ! The entire family approved. Will absolutely be making this again. It’s easy to prepare and delicious to boot and that’s a win in my book . Thanks for sharing the recipe.

  18. 5 stars
Great recipe! I used 1lb of hamburger meat, 1 can of gluten free cream of chicken and everything else was as written! This was excellent and very filling!

  19. I made this two night’s ago. We baked it for two hours and the potatoes were still crunchy. What did I do wrong? Can I slice the potatoes and then boil them separately before adding them to the casserole?

  20. I haven’t done that yet but I think it would work great and would definitely cut down on the baking time.

  21. 5 stars
I added half of a red onion while browning the meat, 2 T Worcestershire sauce, 1/4 c ketchup, and 4 oz cream cheese. It was delicious! Thank you for the recipe.

  22. Thanks for sharing – I’m so glad you enjoy it and the bacon on top sounds delicious!

  23. 5 stars
Love this recipie but Iam on a GLUTEN FREE diet so I use the gf soup available at Walmart in the gf section. They have cream of mushroom and a cream of chicken. I do like to half the milk with heavy cream for a thicker sauce. This is an easy recipie and left overs are great
Crumbled bacon is also a nice topper! Thanks for this recipie. I
    make it every other month!

  24. I don’t use canned foods, could I just add flour and cover with milk instead of the cream of mushroom?

  25. 5 stars
I added green beans towards the end of the bake time. This is very good. Will make this again. No leftovers. Yay!

  26. 5 stars
I add a can of French’s onions to the top of my casserole the last 10 minutes of baking. Adds a nice crunch.

  27. In the oven now and drooling! So hungry. Only thing I added was garlic powder and sugar to the soup mixture, also used cheddar cheese.

  28. I love this but always add a small can of cut green beans. Makes a whole of difference.

  29. I am going to try it with macaroni instead of the potatoes and add a can of stewed tomatoes. Should still be good.

  30. Would frozen cubed/diced potatoes work well? How would the cooking time need to be adjusted?

  31. I added 1/2 c. diced onion to the ground beef as it was cooking. I used my Madelyn to slice 2 carrots at the same thickness as the potatoes and omitted 1 potato. Followed the original recipe but substituted original Almondmilk for the regular milk and used shredded vegan cheese for the cheddar. I didn’t read the instructions too well and only had about an hour to get my meal on the table, SO, I placed my casserole with a glass lid in the microwave for 7 minutes, then transfer it covered with aluminum foil to my oven preheated to 375 degrees. Cooked it for 45 minutes, removed the foil and baked for 10 minutes. Let it set for 10 minutes before serving. Love casseroles that taste like you had worked on it for hours. YUMMY!!!

  32. 5 stars
What a delicious casserole! I used 1 can mushroom soup and 1 can mushroom with roasted garlic soup. I made a beef casserole and a vegetarian casserole (with morning star griller crumbles). Both were delicious. This recipe is a must-try!

  33. Delicious and now one of our favorite meals. I used ground Turkey as this was what I had on hand and added diced onion and green bell pepper and tsp minced garlic to the meat while browning. I also added diced carrots and celery that I boiled in chicken broth to soften. Followed the rest of recipe. Turned out great!!

  34. I made this recipe for supper tonight. The only thing I changed was that I used cream of mushroom soup with roasted garlic instead of traditional. I also added some garlic salt into the hamburger as it was browning. It’s quite tasty. Thank you for the recipe!

  35. This was really good! I put some Steak and Chop seasoning on my Hamburg when browning and used Cream of Onion soup and Cheddar cheese soup with lots of cheese? Also was very good re-heated in the microwave the next day?. This is a keeper recipe.

  36. 5 stars
Loved it! I spiced it up a little with some garlic powder, but that’s it. I can see where it can be very versatile. So simple and economical!

  37. I have made this for years but instead of potatoes I have always used wide noodles, never heard of potatoes in it but bet it would be just as good! Thanks for the heads up.

  38. 4 stars
Rachel, if you had used sliced potatoes in the crockpot you wouldn’t have had that problem, the frozen hash browns arent meant to cook that long!

  39. Beth – The calories are at the bottom of the recipe card. This recipe is 331 calories per serving. Thank you!

  40. Yes, you can. Still layer the ingredients and cook on low for 6-8 hours. Thank you!

  41. Amanda – I have not tried this is the crock pot but I think it would work. I would still layer the ingredients and cook on low for 6-8 hours and put the top cheese on during the last 15-20 minutes of the cook time. Let us know how it turns out. Thank you!

  42. 5 stars
I have made this several times and family loves it! The only thing I do differently is add a small finely chopped onion & 1 clove of minced garlic. I also use frozen shredded hash browns instead of sliced potatoes. I do not recommend putting it in a crockpot. I tried it today since I live in southeast Alabama & didn’t want to heat up the house more using the oven. I layered everything & cooked on low for 5 hours. It turned out mushy & was not good at all. I thought I’d share the experience since some wondered about using a crockpot. Definitely stick with using the oven & it’ll turn out delicious every time.

  43. 5 stars
Could you put this in the crockpot and cook it on low while I’m at work

  44. 5 stars
This is a great & easy recipe! I add about 1/4 c. Sour cream, grated onion and maybe 1/8 half & half. Do slice potatoes thin! Next time I will try frozen hash browns.

  45. 5 stars
Great make ahead meal on the cheep. Can feed a large family. I did tweek it by adding my choice of peppers. Will become a go to Recipe

  46. Patrice – If you still use a 9X13 pan than I would cut the time in half as well. If you are using a smaller pan, than I would keep the time the same since the casserole will be thicker.

  47. Julie – I haven’t tried this one in the crockpot before but I think it might work. I would try layering the ingredients the same and cook on low for 6-8 hours until the potatoes are done. Let me know how it turns out!

  48. Made this awesome dish, highly recommend!! to try it. So delish with flavor. We used fresh grated potatoes like hash browns. On my like list to make ???

  49. Melissa – I have not tried this before but I don’t see why it wouldn’t work. Let me know how it turns out! Thank you!

  50. Would it work to buy the boxes of scalloped potatoes instead of slicing up potatoes?? I dont have anything to slice a potato that fine

  51. 5 stars
I’ve made pretty much the same casserole for years except I’ve always used spicy pork sausage. It IS easy, few ingredients, and family LOVES!

  52. 5 stars
Added onion & garlic to the hamburger while cooking, and added 2 cans of sweet corn in the layering. I also topped it with sliced green onions. Very tasty!

  53. 4 stars
I had some green onions, chopped. I also make a brown gravy. My husband doesn’t like cream of Mushroom soup. Side salad, he said it’s a keeper. Thank you, for a e-z dinner. ?

  54. 4 stars
I mix the cream of celery soup with cheddar cheese soup since I didn’t have much shredded cheese.

  55. Is it possible to make this in a crockpot? Its way too hot to use the oven in the summer here. If so, would you happen to know settings/time? Thanks

  56. There are no seasonings in this recipe. Does it still have some flavor? I think I would definitely add finely chopped onion. My grandkids won’t see the onion amidst other ingredients, but that would add some flavor.

  57. My family loved this recipe. This will be a family favorite. Thank you for sharing

  58. 5 stars
This hamburger casserole is a great dish! I’ve made it several times over the winter, my teenage son loves it, and I’ve served it to company. So far, everyone who’s tried it loves it. Thank you!

  59. Looking forward to try this tonight It’s a weeknight I don’t want much of a mess in my kitchen after dinner. I think I’m going to add some frozen mixed vegetables with that however Thanks for the recipe.

  60. I just put this in the oven. I did substitute 1/2 pound of hamburger with pork, only because I had it in the freezer and needed to use up the pork. I also added 1/2 a large onion to the meat while it was cooking. And, substituted cream of chicken – again, because I had it in the pantry. I am anxious for it to finish cooking. Thanks for the recipe.

  61. This is in the oven as we speak. I’m so excited. It looks awesome. I can’t wait until it’s done.

  62. Cream of chicken would work or they have a creamy onion.. might try sour cream too

  63. I used 1 lb pork sausage 1 lb beef. It gave it a little spice that was nice in it.

  64. Could I substitute the beef with chicken? My kids, all boys, do not like beef, but love chicken.

  65. I make this same casserole with ground beef or any leftover meat I have but I do add onions. I have also added frozen sweet peas with carrots which my family likes. This is even good meatless.

  66. I tried this tonight and it was delicious! Thank you for the recipe! My husband doesn’t like cream of mushroom soup, so I used cream of potato soup and it seemed to work great.

  67. This looks delicious, but my husband doesn’t like cheese. Could I leave it out?

  68. I made this and liked it very much . Then today I made it again and I added onion and green bell pepper. . It’s in the oven now ,so I can’t tell you how it taste…thank you for sharing your recipe .

  69. I cooked the hamburger with a little onion and used cheddar cheese soup instead of cream of mushroom. It was delicious!

  70. This was so yummy thank you! I needed some comfort food and this good old fashioned casserole did the trick. I used cream of potato cause I’m not a fan of mushrooms but otherwise followed your recipe and I wouldn’t change a thing. The hubs loved it too and he can be picky!

  71. I would substitute for the cream of mushroom, cream of chicken because I don’t like mushrooms
