I’m excited today to show you how to make this hamburger casserole. My kids devoured this easy dinner idea. It is the best beef casserole we have made and I think you will agree.

Make sure you have a 9×13 pan.
You also will need a nice 9×13 casserole dish to bake the casserole in. Amazon has some on sale right now!
This is a great meal to take to someone recovering from surgery or that just had a baby. You can use one of these foil pans and clean up is a breeze.
Sometimes we even use these pans on crazy busy nights. Less clean up!
We also like to make 2 of these and put one in the freezer. Talk about a life saver on busy nights.
I can’t tell you the times I have been temped to head toward a drive thru but remembered I had one of these casserole dishes in the freezer. It is a win all around for sure!
Not only will you save money but everyone gets to enjoy a delicious meal. It is a win for everyone!
Ingredients for easy hamburger potato casserole:
- 5 small potatoes
- 2 lbs of ground beef, browned
- 2 cans of cream of mushroom soup
- 1 ½ cups of milk
- 1 ½ cups of shredded cheese (we used a colby jack mix, but cheddar would be great too)
How to make hamburger casserole:
Preheat oven to 350 degrees.
Brown your ground beef and set aside
Peel and slice potatoes and set aside. We use this easy mandoline slicer to cut our potatoes quickly.
In a mixing bowl, combine cream of mushroom soup, milk, salt and pepper to taste. Mix well. Set aside.
Spray a 9×13 baking dish with non stick spray.
Layer in the pan, potatoes, beef, soup, and cheese. Then repeat. Top with remaining cheese.
Cover with foil and bake for 1 hour
Remover foil and bake another 30 minutes until potatoes are fork tender.
Allow it to sit for 10 minutes, then cut and serve.
This hamburger potato casserole is easy to make and tastes great. You can easily assemble this ahead of time and then place in the oven when you are ready to eat.
What to serve with hamburger meat casserole:
I personally like to serve it with a side salad because that makes dinner done with no extra work. However, steamed broccoli (see how to steam broccoli in the microwave easily) would also be amazing without any extra work.
Green beans also taste great and make a simple side dish as well. This meal is also good with asparagus.
This oven roasted asparagus is a family favorite and it is very simple and quick to make.
Just keep it simple.
How to freeze this hamburger potato casserole:
Now this is an easy freezer meal. However, raw potatoes don’t freeze that great, so I suggest you replace the potatoes with a package of frozen hash browns.
Layer just like you would with the hash browns. Cover with foil and freeze.
Then allow it to thaw in your refrigerator overnight and cook according to directions above. If it is still frozen in the middle cook with it covered for 1 ½ hours and then 30 minutes uncovered.
I do recommend you freeze it in one of these 9×13 foil pans. Then cover with foil. Add one of these freezer labels and place in side a 2 gallon freezer bag to keep it fresh.

What else would you alter if you only had 1lb of beef? Would you go ahead and half everything?
Yes, I would Casey.
With 1 lb. I would fill it up with red peppers, diced carrots, more potatoes, some sauteed .
That sounds delicious – or you could even add in beans for a whole new flavor.
If you didn’t have cream of mushroom, what would you use?
cream of celery would work well too.

I cooked the hamburger with a little onion and used cheddar cheese soup instead of cream of mushroom. It was delicious!

I make this same casserole with ground beef or any leftover meat I have but I do add onions. I have also added frozen sweet peas with carrots which my family likes. This is even good meatless.
Could I substitute the beef with chicken? My kids, all boys, do not like beef, but love chicken.
I used 1 lb pork sausage 1 lb beef. It gave it a little spice that was nice in it.

I just put this in the oven. I did substitute 1/2 pound of hamburger with pork, only because I had it in the freezer and needed to use up the pork. I also added 1/2 a large onion to the meat while it was cooking. And, substituted cream of chicken – again, because I had it in the pantry. I am anxious for it to finish cooking. There are no seasonings in this recipe. Does it still have some flavor? I think I would definitely add finely chopped onion. My grandkids won’t see the onion amidst other ingredients, but that would add some flavor.

Julie – I haven’t tried this one in the crockpot before but I think it might work. I would try layering the ingredients the same and cook on low for 6-8 hours until the potatoes are done. Let me know how it turns out!
Patrice – If you still use a 9X13 pan than I would cut the time in half as well. If you are using a smaller pan, than I would keep the time the same since the casserole will be thicker.
Great make ahead meal on the cheep. Can feed a large family. I did tweek it by adding my choice of peppers. Will become a go to Recipe
This is a great & easy recipe! I add about 1/4 c. Sour cream, grated onion and maybe 1/8 half & half. Do slice potatoes thin! Next time I will try frozen hash browns.

I have made this several times and family loves it! The only thing I do differently is add a small finely chopped onion & 1 clove of minced garlic. I also use frozen shredded hash browns instead of sliced potatoes. I do not recommend putting it in a crockpot. I tried it today since I live in southeast Alabama & didn’t want to heat up the house more using the oven. I layered everything & cooked on low for 5 hours. It turned out mushy & was not good at all. I thought I’d share the experience since some wondered about using a crockpot. Definitely stick with using the oven & it’ll turn out delicious every time.

Amanda – I have not tried this is the crock pot but I think it would work. I would still layer the ingredients and cook on low for 6-8 hours and put the top cheese on during the last 15-20 minutes of the cook time. Let us know how it turns out. Thank you!

Rachel, if you had used sliced potatoes in the crockpot you wouldn’t have had that problem, the frozen hash browns arent meant to cook that long!

This was really good! I put some Steak and Chop seasoning on my Hamburg when browning and used Cream of Onion soup and Cheddar cheese soup with lots of cheese? Also was very good re-heated in the microwave the next day?. This is a keeper recipe.

Delicious and now one of our favorite meals. I used ground Turkey as this was what I had on hand and added diced onion and green bell pepper and tsp minced garlic to the meat while browning. I also added diced carrots and celery that I boiled in chicken broth to soften. Followed the rest of recipe. Turned out great!!
What a delicious casserole! I used 1 can mushroom soup and 1 can mushroom with roasted garlic soup. I made a beef casserole and a vegetarian casserole (with morning star griller crumbles). Both were delicious. This recipe is a must-try!
I added 1/2 c. diced onion to the ground beef as it was cooking. I used my Madelyn to slice 2 carrots at the same thickness as the potatoes and omitted 1 potato. Followed the original recipe but substituted original Almondmilk for the regular milk and used shredded vegan cheese for the cheddar. I didn’t read the instructions too well and only had about an hour to get my meal on the table, SO, I placed my casserole with a glass lid in the microwave for 7 minutes, then transfer it covered with aluminum foil to my oven preheated to 375 degrees. Cooked it for 45 minutes, removed the foil and baked for 10 minutes. Let it set for 10 minutes before serving. Love casseroles that taste like you had worked on it for hours. YUMMY!!!
Would frozen cubed/diced potatoes work well? How would the cooking time need to be adjusted?
I am going to try it with macaroni instead of the potatoes and add a can of stewed tomatoes. Should still be good.

I recommend using the homemade cream of mushroom soup recipe instead. It’s easy to make and you get the added flavors of the mushrooms which adds a lot of flavor to this recipe.
Love this recipie but Iam on a GLUTEN FREE diet so I use the gf soup available at Walmart in the gf section. They have cream of mushroom and a cream of chicken. I do like to half the milk with heavy cream for a thicker sauce. This is an easy recipie and left overs are great

I made this two night’s ago. We baked it for two hours and the potatoes were still crunchy. What did I do wrong? Can I slice the potatoes and then boil them separately before adding them to the casserole?

I have been making hamburger casseroles for years
I like to add to the flavor by adding things like potatoes, mushrooms and sometimes green peppers. I have also tried noodles and rice.
This is easy and so delicious. The only change I added : French’s fried onion rings in the layer under the cheese. This is a very tasty, easy to make, easy o the budget dish. You have to try it.
Has anyone added some Rotel, or chunky salsa to the mushroom soup mix to spice it up a bit? That’s what I’m thinking of doing.

How thick do you slice the potatoes?
I sliced mine pretty thin.
I want to know can you peel and dice the potatoes, and preboil them, until almost done add everything in casserole and bake 30 minutes or so instead of icing potatoes. I don’t have that slicer thing and my slices aren’t thin and even to cook well

I made this last night. Thank you for the idea. I added cottage cheese to the layers and made my own soup base (allergies to the ingredients in cream of mushroom soup).
Just made this for my family and they loved it!! I added onions in with the beef and then subbed one can of cream of mushroom for tomato paste. It gave it the perfect “cheeseburger with ketchup” flavor!!
