Ingredients

- Potatoes – Peeled and diced
- Onion, diced – Chop onion into small pieces. Freeze onion so you can chop ahead of time
- Chicken Broth – If you are out, see Chicken Broth Substitutes. You can also use vegetable broth if you prefer.
- Butter – We used unsalted butter

- Heavy Cream and Sour Cream – Adds to the creamy texture
- Xanthan Gum – Helps to thicken the soup

How to Make Instant Pot Baked Potato Soup

Step 1 – Add the diced potatoes, diced onions, chicken broth, seasonings, and butter to your Instant Pot.

Step 2 – Place the lid on the instant pot and lock. Then set the valve to sealing. Set the pressure for 5 minutes on high pressure. The pressure cook time does not take long for this easy meal.

Step 3 – After the 5 minutes is up, you need to do a quick release to release the pressure. Then mix together the heavy cream, sour cream, and the xanthan gum in a small bowl.

Step 4 – Then, open the pot and pour this mixture into the soup and stir with a wooden spoon.
Step 5 – Press the sauté button and cook the soup until it thickens. You need to stir the soup during this process. Sprinkle with your favorite potato soup toppings and enjoy.


Instant Pot Loaded Baked Potato Soup
Ingredients
- 5 large russet potatoes (peeled and diced)
- 1 small onion (diced)
- 4 cups chicken broth
- 4 tablespoons butter
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup heavy cream
- ⅓ cup sour cream
- 1 tablespoon Xanthan Gum
Instructions
- Add the potatoes, diced onions, chicken broth, seasonings, and butter to your Instant Pot.
- Add the lid. Lock and set the valve to sealing.
- Set the pressure for 5 minutes.
- Do a quick release to release the pressure. In a small mixing bowl whisk the heavy cream, sour cream, and the xanthan gum together. This will get thick.
- Stir into the soup.
- Press the saute button and cook the soup (while stirring) until the soup thickens.

- Smoother Soup – If you prefer a smoother soup consistency that is less chunky, you can use a potato masher or immersion blender to mash the potatoes up more.
- Potatoes – Diced potatoes about the same size so it cooks evenly.
- Season after Cooking – Potatoes absorb salt, so taste and adjust at the end

What are the Best Potatoes to Make Potato Soup?
We used Russet potatoes because they are high in starch and hold up well in soup. Yukon Gold (yellow) potatoes also work well in potato soup.
Red potatoes can also be used but aren’t typically my first choice. However, they are pretty to use when you want a hint of color.
Another options is to use shredded or diced hash browns.

Instant Pot loaded potato soup takes about 5-6 minutes of pressure cooking, plus time to build and release pressure.
This is optional but we did peel our potatoes when making this potato soup.
You can use xanthan gum to thicken the soup. Another option is to substitute 2 tablespoons of cornstarch or all purpose flour to make a slurry instead of the Xanthan gum to help thicken the soup. You can also thicken potato soup by mashing some of the potatoes and stirring together.
Leftover Instant Pot loaded potato soup will keep for 3–4 days when stored in an airtight container in the refrigerator. Reheat leftovers in the microwave or on the stovetop.

My parents loved this soup! Is there directions for the stove top? My mother doesn’t have an insta pot. It you could let me know what the instructions are that would be great.
Yes, this can be made on the stovetop. Add all the initial ingredients to a stock pot instead of the instant pot. Simmer for 15-20 minutes until the potatoes are soft and then stir in the remaining ingredients and cook until heated through. I hope you enjoy it!
