The strawberries and whipped topping blend to make decadent layers between the graham crackers. This easy dessert reminds me of strawberry shortcake.

I like to refrigerate this dessert for at least 4 hours before serving. It gives the flavors time to blend and the graham crackers time to soften. Yum!
It’s even better if you make it the day before. You can make it and put in the fridge the day before you want to eat it. Simply take out when you are ready to serve.

Make sure you have a good pan. This recipe calls for an 8×8 baking pan. I just had to replace several of mine and found some on sale on Amazon.
I love the ones with lids especially if I am taking this dessert somewhere. This set from Wilton is my favorite.
I also like to take this dessert when I’m taking a meal to new moms or those recovering from surgery. In those instances, I use disposable 8×8 pans to they can just be tossed.
This is so handy so no one has to worry about washing and returning. Plus, they have the ones with the lids as well. They are so convenient.

- 2 8 oz containers Cool Whip, thawed
- 1 ½ lbs fresh Strawberries, hulled and sliced
- 1 ½ packs Graham Crackers
How to make Strawberry icebox cake recipe:
- Spread a ½ container of whipped topping in a layer on the bottom of an 8×8″ pan.
- Add a layer of graham crackers, breaking as necessary to cover whipped topping.
- Top with another ½ container of whipped topping and smooth with a spatula.
- Add ⅓ of the strawberries in an even layer.
- Then graham crackers, whipped topping, strawberries,graham crackers, whipped topping and strawberries.
- Cover and refrigerate at least 4 hours before serving.

I also wanted to say I made this with sugar free cool whip and sweetened the Strawberries with swerve for those who could not do sugar. The honey maid graham crackers has some sugar but over all I got high marks on it.

If you are making it the night before serving it, I would just store it in the refrigerate. You would not need to freeze it. It tastes great made the day before as the flavor has time to combine. I hope you enjoy the recipe. Thank you!

I made this for a graduation party. Easy and a big hit. I think it’s even yummier the longer it sits. I ate it the day after my party and it was more moist and had a more strawberry flavor. Yummy and easy

Linda – Either way would work great. We usually start with the whipped cream because we love lots of whipped cream but starting with the graham crackers would work great too!
This is in regards to the strawberry icebox cake. I’ve made it before but my recipe calls for putting the graham crackers in first and then layering. Looking at the picture it looks like that’s what was done. It would be messy scooping out with the cool whip down first. What do you think?
