  • Fresh Fruit – This dessert is best made with fresh fruit and you can easily change it to what you prefer. You can add in bananas, blackberries, raspberries, or blueberries are all great options.
  • Cool Whip – Feel free to make this recipe with homemade whipped cream.
  • Cookies – Graham crackers work great, but you can also use other types of cookies such as Oreos or Vanilla Wafers.

How to Make Strawberry Icebox Cake

Step 1 – Spread a ½ container of whipped topping in a layer on the bottom of an 8×8″ baking dish.

Step 2 – Add a layer of graham crackers, breaking as necessary to cover whipped topping.

Step 3 – Top with another ½ container of whipped topping and smooth with a spatula.

Step 4 – Add ⅓ of the slice strawberries in an even layer.

  • Step 5 – Then graham crackers, whipped topping, strawberries, graham crackers, whipped topping and strawberries.
  • Step 6 – Cover and refrigerate at least 4 hours before serving.

Recipe Tips

  • Baking Dish – This recipe is perfect for a 8×8 baking dish. But you can double the recipe and make it in a 9×13 baking dish.
  • Strawberries – Slice strawberries about the same size. I like to make sure to cover the entire pan with the graham crackers, cool whip and strawberries. This makes sure that every bite is full of the ingredients.

    Linda – Either way would work great. We usually start with the whipped cream because we love lots of whipped cream but starting with the graham crackers would work great too!

    This is in regards to the strawberry icebox cake. I’ve made it before but my recipe calls for putting the graham crackers in first and then layering. Looking at the picture it looks like that’s what was done. It would be messy scooping out with the cool whip down first. What do you think?
