Pork loin and pork tenderloin are two different cuts. Pork loin is large, thicker, and has more fat, so it works well with slower cooking. Pork tenderloin is smaller, leaner, and more tender, so it cooks much faster.
They are not interchangeable in recipes without adjusting the cooking time.

Carrie’s Tip: At 350 degrees, plan on about 20 to 25 minutes per pound. A 3-pound pork loin will take about 60 to 75 minutes, a 4-pound loin about 80 to 100 minutes, and a 5-pound loin about 100 to 125 minutes. Always check with a meat thermometer and remove the pork when it reaches 145 degrees internally.
How to Make Bacon Wrapped Pork Loin
Step 1 – Heat Oven – Preheat the oven to 350 degrees F.

Step 2 – Combine Sauce Ingredients – In a small bowl stir together the ketchup, brown sugar, onion powder, pepper, oregano, garlic powder and salt.

Step 3 – Brush the sauce on the pork loin. Brush this sauce all over the pork loin.

Step 4 – Wrap the Pork Loin with bacon – Wrap the seasoned pork loin with the slice of bacon making sure that each slice overlaps the previous slice. Secure the bacon to the pork loin roast with toothpicks.

Step 5 – Place on roasting pan – Place the roast on a rack in a roasting pan.
Step 6 – Cook Pork – Cook for 60-70 minutes until the pork reaches an internal temperature of 145 degrees F.  Use an instant read thermometer to check internal temperature.
Step 7 – Remove from Oven – Remove the pan from the oven. Cover the pan with foil and let the pork rest for 20-30 minutes.
Step 8 – Broil to brown bacon – If the bacon is not fully browned, broil for 2-3 minutes rotating the pork loin halfway through the cook time.
Step 9 – Serve – Then the bacon wrapped pork loin is ready to slice and serve and enjoy.
What Temperature Should Pork Loin Be Cooked To?
Pork loin is safe to eat when it reaches 145 degrees internally. For the juiciest result, remove it from the oven around 140 degrees and let it rest, since the temperature will continue to rise as it sits.
At 145 degrees, the pork may still have a slight blush of pink in the center. If you prefer it more well done, cook it a little longer, but avoid overcooking so it does not dry out.
Recipe Tips
- Pork Loin – Make sure to use a pork loin not a pork tenderloin for this recipe. This cut of meat is best for this recipe.
- Cooking Pork Loin – It is never a good idea to overcook pork. It becomes tough and there really isn’t anything to help make it tender again. Make sure to watch your pork loin closely and use a meat thermometer.
- Let it Rest – Make sure to let your pork rest when you remove from the oven for at least 20 to 30 minutes. It gives time for the juices to really marinate into the pork. If you cut it too early, all the juices will just run on your plate.
- Cover with Foil – We recommend covering with foil while the pork loin rests. This allows for the juice to really marinate into the pork loin resulting in juicy, tender pork loin.
- Adding Bacon – When wrapping the pork loin in bacon, make sure the bacon strips overlap each other. Securing with toothpicks keeps the bacon tightly close to the pork loin.
- Roasting Pan – We recommend roasting in a roasting pan or a rimmed baking sheet to cook the bacon wrapped pork loin. You can add olive oil to the pan to prevent the pork loin from sticking.
- Make Ahead – You can easily prepare this pork loin ahead of time by seasoning and wrapping in bacon. Then place in the fridge until you are ready to bake.
- Let pork rest before cooking. Take the pork loin out of the refrigerator 30 minutes before roasting so it cooks more evenly.
Substitutions and Additions
- Stuffed Pork Loin – Butterfly the pork loin, add your favorite stuffing, then roll it tightly and secure with kitchen twine before wrapping with bacon. Try spinach and cheese, seasoned breadcrumbs, or an herb stuffing.
- Bacon – You can use turkey bacon for this recipe. We like using thin slice bacon but you can use any flavor you prefer.
- BBQ Sauce – Instead of using ketchup, mix the seasoning with BBQ sauce for a different flavor.
- Brown Sugar Mustard Glaze – Mix 2 tablespoons of brown sugar with 2 tablespoons of Dijon Mustard and brush over the pork before roasting.
- Maple Glaze – Combine 2 tablespoons of maple syrup, 1 tablespoons of Dijon Mustard, and 1 minced garlic clove.
- Herb and Garlic – Rub olive oil, garlic cloves, rosemary, thyme and salt and pepper together for a delicious glaze.
- Spicy – If you prefer a hint of spice, add ½ teaspoon of cayenne pepper or red pepper flakes to your glaze.
- Grilled Pork Loin – Season as directed and cook over indirect heat until the pork reaches 145 degrees internally.

Instructions
