Ingredients

- Cauliflower โ one medium head cut into bite-sized florets. Try to keep the pieces uniform so they caramelize at the same rate. Fresh cauliflower gives the best result but see the FAQ for frozen
- Extra virgin olive oil โ coats the cauliflower and helps it caramelize in the oven. Avocado oil also works great at high heat
- Garlic powder โ adds savory depth without any chopping. Garlic salt or fresh minced garlic also work
- Paprika โ adds a warm slightly smoky color and flavor. Smoked paprika is an excellent substitute for a deeper flavor

How to Make Roasted Cauliflower
The key to perfectly crispy roasted cauliflower is a single layer on the baking sheet and high heat โ do not skip either of these.
Step 1 – Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.

Step 2 – Remove the leaves from the cauliflower and remove the florets. Dice into small bite-sized pieces if needed to make easy bite size pieces.

Step 3 – Place the cauliflower in a large bowl, drizzle the olive oil on top and sprinkle the garlic powder, salt, paprika and black pepper on top. Toss to thoroughly coat the cauliflower with the oil and the seasoning mixture.

Step 4 – Spread the cauliflower on the baking sheet in a single layer.

Step 5 – Bake for approximately 20 minutes until the cauliflower starts to brown and gets caramelized.
Step 6 – Remove from the oven, let it sit for a few minutes and then itโs ready to serve and enjoy!
Expert Tips
- Single layer is essential. Overcrowding the baking sheet causes the cauliflower to steam instead of roast โ you get soft pale cauliflower instead of crispy caramelized edges. Use two baking sheets if needed
- High heat is the key. 425ยฐF is the sweet spot for caramelization. Lower temperatures will cook the cauliflower but will not give you those crispy golden edges
- Cut pieces the same size. Uniform florets caramelize at the same rate โ large and small pieces mixed together means some burn while others are still pale
- Adjust time for your preferred texture. For softer cauliflower roast closer to 25 minutes. For crispier cauliflower check at 18 minutes. Every oven is slightly different so watch it in the last few minutes

Variations Ideas
- Parmesan Roasted Cauliflower โ sprinkle ยฝ cup freshly grated Parmesan over the top in the last 5 minutes of roasting for a cheesy golden crust
- Buffalo Cauliflower โ toss with homemade buffalo sauce right before serving for a spicy crowd-pleasing twist
- Italian Seasoning โ add ยฝ teaspoon of Italian seasoning to the spice blend for an herby variation
- Curry Cauliflower โ add ยฝ teaspoon curry powder for a warm deeply flavored variation
- Lemon finish โ squeeze fresh lemon juice or add lemon zest over the top right before serving for a bright fresh contrast
- BBQ or Tahini drizzle โ drizzle your favorite sauce over the roasted cauliflower just before serving for a completely different flavor profile
What to Serve with Roasted Cauliflower?
Roasted Cauliflower makes a delicious side dish to many main dish recipes. These are some of our favorite to pair with this delicious roasted cauliflower.
Storage and Freezer Instructions
- Refrigerator – Store in an airtight container for up to 4-5 days.
- Freezer – Roasted cauliflower does not freeze well โ the texture becomes watery when thawed. Make only what you plan to eat fresh
- Reheating – Air fryer at 375ยฐF for 3โ4 minutes is the best method for restoring crispiness โ the microwave works but makes it soft

Yes, you can roast frozen cauliflower but we do recommend thawing cauliflower first. After thawing, toss with oil and seasoning then place on a baking sheet to roast.
The edges should be golden brown and slightly caramelized and the florets should be tender when pierced with a fork. If the edges are browning but the center is still firm give it another 3โ5 minutes. If it is browning too fast move the baking sheet to a lower rack.
