You can literally cut it with your fork it is so tender. The carrots and potatoes compliment the roast for the perfect meal! This is a one pot meal so dinner time will be a breeze!
The only thing that might make this slow cooker roast beef with potatoes and carrots better is to serve it with cornbread. The Worcestershire sauce is tangy while the brown sugar is sweet for the perfect burst of flavor. I love to dip my cornbread in this sauce. Yum!

I have the Ninja cooking system and it is my absolute favorite. The nice thing about this is you can brown the meat in the same slow cooker.
It is nice to just have the one pan to clean and it is very handy. It has become of my favorite kitchen appliances.

I also like to use crock pot liners to make clean up a breeze. These are worth every penny and save a ton of time. If you don’t use the liners, I would use cooking spray.

This roast recipe is simple to make and I bet you already have most of the ingredients in your pantry!
- Pot Roast
- Onion
- Beef Broth
- Balsamic Vinegar
- Brown Sugar
- Worcestershire Sauce
- Baby Carrots
- Mini Potatoes or Diced Potatoes
- Minced Garlic
- Italian Seasoning
- Salt and Pepper
Do you have to brown a roast before putting it in the crockpot?
Now this is going to be based on what you prefer. Generally, I do not brown my roast prior to putting it into the crock pot. To be honest, I usually throw it in the slow cooker frozen so I don’t even worry about.
Some people love to brown their roast first. If you choose to do so, make sure that it’s thaw and you can brown it in olive oil in either a large skillet or a dutch oven.
I have tried both ways and I don’t think that it’s adds a ton of flavor to this recipe, so I just throw it right into the crock pot!
What type of roast is best for slow cooker?
I like to use a chuck roast for this slow cooker balsamic pot roast recipe. Cooking it in the crock pot makes it tender and juicy. I have found that an arm roast works great as well.
Directions for slow cooker balsamic glazed roast beef:
First place the roast, potatoes, carrots and onions in a crock pot. Then pour the beef broth, balsamic vinegar, brown sugar, and Worcestershire sauce on top.
Next add in the seasonings. Cover and cook on low for 8-10 hours or on high for 5-7 hours. You’ll want to adjust your cooking time based on how your crock pot. You’ll know when the roast has been covered and cooked long enough because the beef will easily fall apart!
Shred the beef (it should fall apart). Spoon the sauce on top.

Easy Balsamic Crock pot Pot Roast Recipe
Ingredients
- 3 pounds pot roast
- 1 large onion (chopped)
- 2 cups beef broth
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar

- 1 pound baby carrots
- 1 pound mini potatoes or diced potatoes
- 1 teaspoon minced garlic

Instructions
- Place the roast, potatoes, carrots and onions in a crock pot.
- Pour the beef broth, balsamic vinegar, brown sugar, and Worcestershire sauce on top.
- Add the seasonings.
- Cover and cook on low for 8 hours or on high for 5 hours.
- Shred the beef (it should fall apart). Spoon the sauce on top.
- Enjoy!

I don’t know about you, but I love meals in the crock pot. They’re even better when they are one pot meals. :). I have also mixed in frozen or canned green beans into this recipe for more nutrients for my family.
No need for separate side dishes as everything is in the crock pot. You have a delicious and tender roast with carrots and potatoes. Dinner is going to be great!
I always put this on my menu plan for days that are especially busy. Whether it’s after school activities or work related, I can take one thing off my list by not having to worry about dinner 🙂

Will these cook fully if you put them in crock pot frozen or do you need to add time?
Made this for my daughter to enjoy while she was dog-sitting for us one night. Her ex and their son were there for dinner. The three of them ate the entire thing!!!! Got home the next day, and asked where leftovers were, so I could try it. The only answer I received was “Oops! It was really good!”.
