It is packed with protein and if you are looking for a gluten free bread, this is the one to make. No flour is added to make this bread.

  • Cottage Cheese – We recommend using full-fat cottage cheese or low fat
  • Eggs – You will use 2 whole eggs or you just use the egg whites

How to Make Cottage Cheese Flatbread

  • Step 1 – Preheat the oven to 350 degrees F.

Step 2 – In a blender combine all ingredients and blend until smooth and combined.

Step 3 – Line a baking sheet with parchment paper. Spray with nonstick cooking spray.

  • Spreading the Mixture – Make sure the mixture is spread on the sheet pan about the same amount. This ensures that it bakes evenly without burning.
  • Baking Bread – You will know that your flatbread is finished baking when the bread is golden brown and it has a firm texture.
  • Combining Ingredients – We used a regular blender to combine the ingredients. But you can also use a immersion blender or a food processor.
  • Cool Bread – Before adding your toppings, we recommend allowing the bread to cool for about 5-10 minutes. This helps to use as a sandwich wrap without breaking.

I love making this flatbread with Italian seasoning but you can easily switch these seasoning on for your favorite to change up the flavor of this flatbread.
