Recipe Notes
- Au Jus – You can take ¼ cup cornstarch mixed in with ¼ cup water. Stir that into the broth. Turn to high and stir until thicken so you get a nice thickened sauce. This is great to dip the sandwiches in.
- Broil – To add flavor to your sandwich we like to broil the sandwich for a golden brown crust. It also helps to melt the slice of cheese for a delicious cheesy sandwich.
- Cooking Time – We like to cook the beef on low for about 8 hours for best results. This allows the beef to shred easily for an amazing Slow Cooker French Dip Sandwich.
- Roast – This recipe can be made with different types of roast. I like using a chuck roast as it is easy to shred and is so delicious.
- Seasoning – Feel free to make this recipe with different types of seasoning. Add in a bay leaf, garlic powder or onion powder. I usually start with a ½ teaspoon but you can definitely add more to what you prefer.
- Sauce – Adding the beef broth to cook the roast in adds so much flavor. But you can also add in ½ tablespoon of Worcestershire Sauce and soy sauce.

Frequently Asked Questions
Yes! This Crock pot French Dip recipe freezes great. Just put all of the ingredients together and freeze instead of cooking it. You will love having this for a quick and easy dinner idea during busy weeknights. When you are ready to cook it, place the contents of your freezer bag into the crockpot (ingredients can be thawed or frozen) and cook on low for 6-8 hours. We love to make extra just to freeze. It is so handy having these quick and easy meals in the freezer.
We recommend storing the shredded beef separately instead of placing on the hoagie buns. This helps to keep the buns from getting soggy. Store in an airtight container and then place in the fridge.
We love the way the provolone cheese melts, but you can also use Swiss cheese.

THANK YOU! What a great Fall lunch recipe. Can’t wait to try it today!
You’re very welcome, Wini! Let us know what you think!
Delicious!
Heather – I’m so glad you loved it!
Absolutely delicious! Only thing different I do is I use fresh garlic. My go to for a nice meal that isn’t something we have all the time.
I’m so glad you enjoy it! Thank you so much for leaving the review!
What whole foods can I substitute for the package onion soup mix? I’ve learned to eat clean (LOVE IT!) and the mix is loaded with additives which are not healthy for me. On that note I so appreciate your thoughtful consideration by including all the nutritional facts that are immensely relevant to anyone working toward a better health outcome-THANK YOU)!
I have been wanting to try a homemade version of the onion soup mix but I haven’t been able to test it yet. It’s a mixture of onion flakes, dried parsley, onion powder, celery seed, beef bouillon granules, paprika and black pepper. They are a lot of great recipes out there but sadly I have not created one yet but it’s on my list! I hope you enjoy our Crock Pot French Dip recipe. It’s one of my favorites!
Excellent. I sliced the roast beef and it was was so tender! Dipping it in the broth was soo good. I will be making this often!
What’s the cooking time if you want to use shaved beef instead ?
I wouldn’t take long to cook the shaved beef through, so I would cook on low for 1-2 hours or on high for 1 hour until the beef is cooked through.
Recipe says it serves 10, but only calls for 6 rolls? What am I missing?
Sorry for the confusion. This recipe serves 6 and I have updated the recipe. Thank you!
This was so good. I even made it for 30 people and they loved it. I used a Chuck Roast and also
added Beef Soup Base and used Low Sodium Beef Broth.
A new family favorite!
I’m so glad you enjoy it!
Is the nutrition info based on 1 sandwich as 1 serving?
Yes, a serving is 1 sandwich.
My husband really loves French Dip Sandwiches. When I made this recipe tonight for dinner he put his hands up after taking a bite and said “ Don’t talk, I just need a minute to take this in. This sandwich is restaurant level good “. He rarely says anything like that about a new recipe we try. So it is now on oh dinner rotation for sure. Loved it.
I’m not sure what 3-4 beef roasts mean with no unit if measurement listed. Pounds? 4 whole roast? Obviously not but you see my point. Also it says to add everything but the rolls but you also do not add the cheese.
I apologize for the confusion. It is a 3-4 lb roast
Just made this tonight for my family. All the picky eaters enjoyed it which speaks volumes! I absolutely LOVED this and will definitely keep making it! The au ju I can eat as a soup that’s how flavorful and delicious it is!!
