Variations Ideas

  • Roast – This recipe can be made with different types of roast. I like using a chuck roast as it is easy to shred and is so delicious.
  • Seasoning – Feel free to make this recipe with different types of seasoning. Add in a bay leaf, garlic powder or onion powder. I usually start with a ½ teaspoon but you can definitely add more to what you prefer.
  • Sauce – Adding the beef broth to cook the roast in adds so much flavor. But you can also add in ½ tablespoon of Worcestershire Sauce and soy sauce.

Step by Step Instructions

Placing the seasoning and onions with the roast in the slow cooker

Step 1 – Place everything (except the rolls) in the crock pot. Cover and cook on low for 8-10 hours.

Placing the cooked shredded beef in the hoagies with cheese and placing on the baking sheet

Step 2 – Remove the roast from the crock pot and Shred the beef. Serve on toasted hoagie rolls. Top with provolone cheese. You can melt the cheese under a broiler.

  • Step 3 – Serve with the juice and dip your French dip sandwiches into the broth. Season with salt and pepper for delicious addition.

Recipe Tips

  • Au Jus – You can take ¼ cup cornstarch mixed in with ¼ cup water. Stir that into the broth. Turn to high and stir until thicken so you get a nice thickened sauce. This is great to dip the sandwiches in.
  • Broil – To add flavor to your sandwich we like to broil the sandwich for a golden brown crust. It also helps to melt the slice of cheese for a delicious cheesy sandwich.
  • Cooking Time – We like to cook the beef on low for about 8 hours for best results. This allows the beef to shred easily for an amazing Slow Cooker French Dip Sandwich.

Frequently Asked Questions

Can you Freeze French Dip?

Yes! This Crock pot French Dip recipe freezes great. Just put all of the ingredients together and freeze instead of cooking it. You will love having this for a quick and easy dinner idea during busy weeknights. When you are ready to cook it, place the contents of your freezer bag into the crockpot (ingredients can be thawed or frozen) and cook on low for 6-8 hours. We love to make extra just to freeze. It is so handy having these quick and easy meals in the freezer.

How to Store Leftovers

We recommend storing the shredded beef separately instead of placing on the hoagie buns. This helps to keep the buns from getting soggy. Store in an airtight container and then place in the fridge.

Can I Use Different Cheese?

We love the way the provolone cheese melts, but you can also use Swiss cheese.

Excellent. I sliced the roast beef and it was was so tender! Dipping it in the broth was soo good. I will be making this often!

  2. Carrie Barnard says:

I wouldn’t take long to cook the shaved beef through, so I would cook on low for 1-2 hours or on high for 1 hour until the beef is cooked through.

  3. Nadia says:

What’s the cooking time if you want to use shaved beef instead ?

  4. Carrie Barnard says:

Sorry for the confusion. This recipe serves 6 and I have updated the recipe. Thank you!

  5. Carrie Barnard says:

Yes, a serving is 1 sandwich.

This was so good. I even made it for 30 people and they loved it. I used a Chuck Roast and also
added Beef Soup Base and used Low Sodium Beef Broth.

  9. Rachel Thissen says:

    A new family favorite!

  10. Becca says:

Is the nutrition info based on 1 sandwich as 1 serving?

  11. Virginia Kirnberger says:

My husband really loves French Dip Sandwiches. When I made this recipe tonight for dinner he put his hands up after taking a bite and said “ Don’t talk, I just need a minute to take this in. This sandwich is restaurant level good “. He rarely says anything like that about a new recipe we try. So it is now on oh dinner rotation for sure. Loved it.

  12. Carrie Barnard says:

I apologize for the confusion. It is a 3-4 lb roast

  13. Julie says:

I’m not sure what 3-4 beef roasts mean with no unit if measurement listed. Pounds? 4 whole roast? Obviously not but you see my point. Also it says to add everything but the rolls but you also do not add the cheese.

  14. Lorie Townley says:

My family loves this recipe!! I make it often. Thank you for sharing it, and so many other awesome recipes! Question though,: Why in the recipe does it say cool time 8 to 10 hours on low, but if you make it from frozen it says 6 to 8 hours on low? Wouldn’t the frozen take longer than making it ” fresh”? Is it cooked first, then frozen? Sorry if this is a dumb question, but I’m a little confused on this point. Thanks for your help! And all the delicious recipes!

  18. Carrie Barnard says:

I’m so glad you loved it!

    Either cheese will work.

  23. Kellie says:

Made this in the crockpot and was thickening it a little and had my wife pulling some out and my dad doing the same and they both loved it. It was easy and delicious. It’s exactly what I wanted to find when looking for new recipes. Thank you for sharing it.

  28. Brennan says:

This was THE BOMB. The entire family loved it. My brother said it was one of the best meals I’ve ever made haha. The only thing i changed recipe wise was I cooked mine for about 7 hours and then when I went to shred the beef I picked all the fat out of it and then strained the sauce. I recommend keeping the fat on the roast until it’s cooked cause fat=flavor!

  29. Kari says:

Have made this recipe 100x if not more. It is one of our all time favorite meals to make. We sub deer roast for the beef. AMAZING!!

Absolutely Amazing Recipe. My family all loves it.

  36. Carrie says:

You can freeze this raw (place all ingredients in a freezer bag) and just throw the freezer bag ingredients in the crock pot when you’re ready to cook it or you can freeze the leftovers in a freezer bag as well. When freezing the leftovers, I do include the leftover meat and all the sauce from the crock pot.

  37. John says:

when you freeze it you put the leftover meat and all the ingredients in a freezer bag?

  38. Dea says:

This was SOOOO easy and SOOO incredibly good!!!! Just got done shredding the roast and the flavor is delicious!!! Cant wait to get it on the Hoagie rolls and top with some Provolone cheese!! Am thickening the dipping broth as we speak! This will definitely go into my rotation of easy hot AND cold weather dinners!! Thank you!!!!

  39. Carrie says:

I find that a chuck or a rump roast works the best for this recipe. Thank you!
