Cheesy Beef Quesadillas Recipe:

Cheesy Ground Beef Quesadillas is a great recipe to serve any day of the week. Seasoned ground beef is cooked in a skillet and then topped on a flour tortilla with cheese. The tortilla is then folded to make a delicious cheesy beef quesadilla.

The quesadilla is cooked to perfection with a crispy texture and the gooey cheesy center. My family loves quesadilla as you can load them with a variety of cheeses and meat.

These quesadilla are simple to make with easy ingredients. Making homemade quesadillas saves time and money and they perfect weeknight meal. Add your favorite toppings and sides for a complete meal idea.

Ingredients needed - ground beef, minced garlic, onion powder, cumin, chili powder, salt and pepper, tomato sauce, burrito size tortilla, cheese

Ingredients: 

  • Ground Beef 
  • Minced Garlic 
  • Onion Powder 
  • Cumin 
  • Chili Powder 
  • Salt 
  • Black Pepper 
  • Tomato Sauce (8 oz can) 
  • Burrito Size Tortillas (10 inch tortillas) 
  • Colby Jack Cheese (shredded) 

How to Make Ground Beef Quesadillas: 

  • Step 1 – Cook Ground Beef – Brown the ground beef in a large skillet over medium high heat. Cook beef until no longer pink and browned.  Drain off the excess grease and return the beef to the skillet.

  • Step 2 – Add in the additional ingredients. – Stir in the minced garlic and heat for 1 minute until the garlic is aromatic.  Then stir in the tomato sauce and seasonings.  Stir well to combine all the ingredients. 
  • Step 3 – Continue Heating – Heat over medium high heat for 2-3 minutes. Remove from heat and set aside. 
  • Step 4 – Assemble the Quesadillas – Heat a separate skillet over medium high heat.  Place a tortilla in the skillet.  Add the beef mixture to half the tortilla and top with 1 cup of the shredded cheese. 
  • Step 5 – Cook both sides – Fold the tortilla in half.  Cook until the bottom of the quesadilla is golden brown (2-3 minutes).  Flip and cook until the opposite side is also golden brown (2-3 more minutes) and the cheese is melted.

  • Step 6 – Serve and Enjoy – Remove from the skillet to a separate plate.  Follow the same process with the remaining ingredients to form 3 more quesadillas.  Slice each quesadilla into 4 pieces.  Serve warm and enjoy!

What type of Tortillas for Quesadillas?

When making quesadillas we recommend using flour tortilla instead of corn tortillas. The larger tortilla hold up better when loaded with the beef mixture and cheese.

There are several type of tortillas that you can use including low carb or you can make homemade tortillas.

Substitutions and Additions:

  • Cheese – There are a variety cheeses that can be used when making quesadilla. You can easily use a Mexican blend cheese or add in some pepper jack cheese for extra flavor. Monterey Jack Cheese is also a good addition to these quesadillas.
  • Remove the ground beef – We love making quesadilla with just cheese for a delicious cheese quesadilla option. We like to use multiple types of cheese for melty cheeses combined together.
  • Change the Seasoning – If you prefer you can seasoning the ground beef with taco seasoning. Make your own or use the packet taco seasoning. Make sure to add in salt and pepper.
  • Spicy – If you prefer your ground beef to be a little spicy, mix in some red pepper flakes for added flavor. Add a teaspoon of chili powder for added flavor.
  • Vegetables – You can easily add in some cooked bell peppers and onions. Cook these vegetables on the griddle to easily add to your quesadilla. We recommend cooking over medium low heat for best results.
  • Add in other ingredients – You can can easily add in corn or chopped cilantro to the ground beef mixture.

What to Serve with Quesadillas?

Quesadillas can be served with many different toppings or sides. They are also delicious by themselves. Here are some of our favorites.

How to Serve and Reheat Quesadillas:

We usually do not have a lot of leftover quesadillas but when we do they are easy to reheat. The quesadillas can easily be reheated in a skillet or sheet pan for best results.

Heating the leftover quesadillas on medium heat will give the quesadillas a crispy texture. If you prefer, you can place the quesadillas on a baking sheet to reheat. These quesadillas will reheat in about 10 minutes in a preheated oven at 375 degrees.

Serve these leftover quesadillas with dipping sauces including, sour cream and salsa. We love to serve leftover quesadillas for lunch the next day.

How to Store Leftovers:

Refrigerate the leftovers in an airtight container for up to 4-5 days.

Beef Quesadillas Tips:

  • Cooking the Quesadillas – When cooking the quesadillas in the skillet, make sure to watch carefully. It doesn’t take long to cook the quesadillas before they can burn.
  • Cooking the Ground Beef – While cooking the ground beef, use a wooden spoon for beef breaking. This allows to make sure the beef cooks thoroughly and the beef is no longer pink.
  • Flipping the Quesadilla – Carefully flip the quesadilla so both sides cook until they are golden brown. Make sure the filling does not fall out while flipping. You may need to cut quesadilla to easily flip it.
  • Keep it Simple – Quesadilla is my favorite recipe to make. It can be as simple as cheese and tortilla. But feel free to make a veggie quesadilla or load it with protein.

Ingredients

  • 1 pound Ground Beef
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Onion Powder
  • ½ teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 can Tomato Sauce 8 oz can
  • 4 Burrito Size Tortillas 10 inch tortillas
  • 4 cups Colby Jack Cheese shredded

Instructions

  • Brown the ground beef in a large skillet over medium high heat until no longer pink and browned.  Drain off the excess grease and return the beef to the skillet.
  • Stir in the minced garlic and heat for 1 minute until the garlic is aromatic.  Then stir in the tomato sauce and seasonings.  Stir well to combine all the ingredients.  Heat over medium high heat for 2-3 minutes. Remove from heat and set aside.
  • Heat a separate skillet over medium high heat.  Place a tortilla in the skillet.  Add the beef mixture to half the tortilla and top with 1 cup of the shredded cheese.  Fold the tortilla in half.  Cook until the bottom of the quesadilla is golden brown (2-3 minutes).  Flip and cook until the opposite side is also golden brown (2-3 more minutes) and the cheese is melted.
  • Remove from the skillet to a separate plate.  Follow the same process with the remaining ingredients to form 3 more quesadillas.  Slice each quesadilla into 4 pieces.  Serve warm and enjoy!
