These tasty chicken quesadillas will be a hit. It is the easiest Mexican recipe and so delicious. It combines all the flavors of fajitas into easy to eat quesadillas.

What are Fajitas?

Fajitas are a Tex-Mex style dish consisting of sautéed or grilled meat. Typically, it is chicken, steak or shrimp.

The meat is usually cooked with sautéed onions and bell peppers. Everything is served with corn tortillas for a delicious meal.

What are Quesadillas?

They are tortillas folded in half and stuffed with cheese and other delicious ingredients. Steak, shrimp, chicken and veggie options are popular in quesadillas.

Quesadillas are grilled or fried until golden on the outside and the inside is gooey and the cheese is melted.

Recipe Variations

  • Cheese. You can easily use your favorite type of cheeses in this quesadilla recipe. Feel free to substitute for other types of shredded cheese.
  • Veggies. We love using red bell pepper in this recipe but any type will work great in this recipe. Try using green or yellow bell peppers.
  • Leftover chicken. You can use cooked chicken for this recipe if you prefer to save time on making this quesadilla recipes. It is a great recipe to use leftover chicken.
  • Seasoning. We used taco seasoning but you can also use fajita seasoning. Other ideas include chili powder.

How to Make Chicken Fajita Quesadillas

  • Step 1 – Warm up the oil. Heat the vegetable oil in a large skillet over medium heat.
  • Step 2- Add in the chicken. Season it with the taco seasoning or you can use fajita seasoning. Sauté the chicken for 3-4 minutes per side until it’s browned slightly.
  • Step 3 – Next, add the veggies. Add the red bell pepper and onions. Sauté them with the chicken for 5-7 minutes until the chicken is cooked through and the vegetables are tender.

  • Step 4 – Coat in salsa. Toss the chicken and vegetables with salsa. Continue to toss the chicken and vegetables with the salsa to thoroughly coat the mixture with the salsa.

    Sauté to combine the flavors and make sure that the chicken is cooked through (internal temperature of 165 degrees F). Then remove the mixture from the heat.
  • Step 5 – Prepare the griddle. Heat a griddle over medium high heat or you can heat a cast iron skillet.
  • Step 6 – Place the tortillas on the griddle or skillet. Finally, top each tortilla with a small amount of each cheese, then layer the chicken on top and then add more cheese. Lastly, fold each the tortillas carefully in half making a half moon shape.
  • Step 7 – Cook until one side of the tortilla is golden brown (3-4 minutes). Then flip and cook until the other side is golden brown as well (3-4 minutes). Next, watch them closely as they do brown quickly.

  • Step 8 – Remove the quesadillas onto a cutting board. Then, slice them and they are ready to serve and enjoy!

Recipe Tips

  • Oil – I used vegetable oil in this recipe but any oil with a high smoke point will work great. Avocado oil, coconut oil or canola oil would work great in this recipe. Just do not use oils with low smoke points such as olive oil.
  • Chicken – Make sure to dice up the chicken about the same size so it cooks evenly. To ensure the chicken is fully cooked, we recommend using a meat thermometer.

How to Store Leftovers
