How to Make Chicken Fajita Quesadillas
- Step 1 – Warm up the oil. Heat the vegetable oil in a large skillet over medium heat.
- Step 2- Add in the chicken. Season it with the taco seasoning or you can use fajita seasoning. Sauté the chicken for 3-4 minutes per side until it’s browned slightly.
- Step 3 – Next, add the veggies. Add the red bell pepper and onions. Sauté them with the chicken for 5-7 minutes until the chicken is cooked through and the vegetables are tender.
- Step 4 – Coat in salsa. Toss the chicken and vegetables with salsa. Continue to toss the chicken and vegetables with the salsa to thoroughly coat the mixture with the salsa.
Sauté to combine the flavors and make sure that the chicken is cooked through (internal temperature of 165 degrees F). Then remove the mixture from the heat.
- Step 5 – Prepare the griddle. Heat a griddle over medium high heat or you can heat a cast iron skillet.

- Step 8 – Remove the quesadillas onto a cutting board. Then, slice them and they are ready to serve and enjoy!
Recipe Tips
- Oil – I used vegetable oil in this recipe but any oil with a high smoke point will work great. Avocado oil, coconut oil or canola oil would work great in this recipe. Just do not use oils with low smoke points such as olive oil.
- Chicken – Make sure to dice up the chicken about the same size so it cooks evenly. To ensure the chicken is fully cooked, we recommend using a meat thermometer.
