Today I wanted to show you how we make this fun BBQ Chicken Quesadillas Recipe using leftovers. It is so delicious and super easy for busy week days. Enjoy for lunch or dinner.

This recipe is one of our favorites and we enjoy it for school lunch, easy summer meals or any time of year. It is so good that we love to eat it all the time. This recipe is a must try.

Why This Recipe Works

If you need an easy recipe, try making these BBQ chicken quesadillas. The kids are going to love it. No one will even realize they they are eating leftovers. I love when I can cook once and eat twice.

The kids ask for this all the time in their lunch box and it is a nice change from sandwiches all the time.

Ingredients

  • Cooked Shredded Chicken Breast– You can use leftover cooked chicken or a Rotisserie Chicken would work great too.
  • Barbecue Sauce – Use your favorite kind or try this easy homemade BBQ Sauce.
  • Large Flour Tortillas – We typically buy the Burrito Size. But any size will do. They are even good with the low carb flour tortillas.
  • Monterey Jack Cheese – Any cheese blend would work great. We like to mix cheeses.

  • Cheese – Any cheese will work. Pepper jack cheese and Colby make good substitutes.
  • Beans – Black beans or even pinto beans taste amazing.
  • Veggies – Corn, spinach, red onion, bell pepper, etc make great add ins.

  • Pico de gallo – top the chicken with this. Yum!
  • Sour cream – I like to put a little bit of sour cream all over the chicken mixture.
  • Taco Seasoning – Mix the chicken with some taco seasoning instead.

How to Make Chicken Quesadillas

  • Step 1 – Cut the chicken into small pieces. You can dice or shred it.
  • Step 2 – Add the bbq sauce and combine it with the chicken. Stir this together and set aside.
  • Step 3 – Get your skillet ready and spray with cooking spray or use olive oil. I actually like to use a griddle so I can do several at once. If you have a big family like I do, this is so handy and goes much faster.
  • Step 4 – Put one of the flour tortillas down and add the chicken mixture, chopped green onion and both types of shredded cheese on one side. Fold the tortilla over so that it makes a half moon shape.
  • Step 5 – Finally, cook the quesadillas for a few minutes on each side until the tortillas are golden browned and the cheese is melted. Keep repeating the process until you have made all the quesadillas. Let them cool and slice. Enjoy!

Before placing the quesadillas in the airtight container, place a paper towel down then top with quesadillas. This absorbs moisture to prevent the tortilla from getting soggy.

Ingredients

  • 2 cups Cooked Chicken
  • 1 cup Barbecue Sauce
  • 6 Large Flour Tortillas Burrito Size
  • 2 cups Monterey Jack Cheese shredded
  • 2 cups Cheddar Cheese shredded
  • 1/4 cup Green Onions diced

Instructions

  • Dice the chicken into smaller pieces. Stir together the chicken and the barbecue sauce into the chicken is thoroughly coated with the sauce.
  • Heat a large skillet or griddle over medium high heat.  Place down one flour tortilla.  Place the chicken mixture, green onions and each of the two types of cheese on one side of the flour tortilla.  Fold the tortilla over to make a half moon shape.
  • Cook for 2-4 minutes on each side until the tortillas are browned slightly.  Continue doing this process until all of the quesadillas are made.
  • Let the quesadillas cool for 5 minutes, then slice and serve.  Enjoy!
