- 2 boneless chicken breasts frozen
- 2 cans of great northern white beans
- ½ onion chopped
- 1 can of diced tomatoes with green chili’s
- ½ packet of taco seasoning (You can make your own taco seasoning if you want – use 2 Tablespoons)
- ½ tsp Garlic salt
- salt and pepper to taste
- 2 cups chicken stock
- Optional: sour cream, shredded cheese, tortilla chips, and cilantro for topping
How do you make Mexican chicken soup?
- Place frozen chicken in the Instant pot. Dump everything else in the instant pot on top of the chicken.
- Add the lid. Make sure the valve is set to sealing
- Set the pressure for 30 minutes on manual high pressure.
- Do a quick release pressure release.
- Remove chicken and shred. Place back in the Instant pot and stir to combine.
