You can certainly use store bought taco seasoning but I prefer to make my own. It is so easy to make Homemade Taco Seasoning Mix and you will have it on hand for other recipes.

You can also add black beans to the soup to stretch your mean even more!

Ingredients for Mexican Chicken Soup Pressure Cooker Recipe:

  • 2 boneless chicken breasts frozen
  • 2 cans of great northern white beans
  • ½ onion chopped
  • 1 can of diced tomatoes with green chili’s
  • ½ packet of taco seasoning (You can make your own taco seasoning if you want – use 2 Tablespoons)
  • ½ tsp Garlic salt
  • salt and pepper to taste
  • 2 cups chicken stock
  • Optional: sour cream, shredded cheese, tortilla chips, and cilantro for topping

How do you make Mexican chicken soup?

  1. Place frozen chicken in the Instant pot. Dump everything else in the instant pot on top of the chicken.
  2. Add the lid. Make sure the valve is set to sealing
  3. Set the pressure for 30 minutes on manual high pressure.
  4. Do a quick release pressure release.
  5. Remove chicken and shred. Place back in the Instant pot and stir to combine.

Absolutely! I love when we have leftovers so I can freeze some for a quick lunch or dinner.

You can cook the dinner and then place the left overs in freezable containers for a quick meal later. Another option is to use a freezer bag and place in freezer.

The bags are a good idea if you are short on storage space in your freezer. They can be frozen flat to take up less room.

Another option is to place all the ingredients in a freezer baggy uncooked and place in freezer. Then you just dump the freezer bag into the instant pot and cook.

  • ½ onion chopped
  • 1 can diced tomatoes with green chilis (10 oz)
  • 2 Tbsp taco seasoning
  • ½ tsp Garlic salt
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 4 cups chicken broth


  • Place chicken in the Instant pot. Place all the other ingredients in the instant pot.
  • Add the lid. Make sure the valve is set to sealing
  • Set the pressure for 25 minutes.
  • Do a quick release to release the pressure.
  • Remove chicken and shred. Place back in the Instant pot and stir to combine.
  • Then serve topped with your favorite taco toppings and enjoy!

*Refrigerate the leftovers in an air tight container for up to 5-7 days.  
I love topping mine with shredded cheese, sour cream and tortilla strips!
