Why Make Jalapeño Corn Dip

We love making this Jalapeno Corn Dip because of the balance of heat and sweetness makes each bite irresistible, especially when scooped up with tortilla chips or fresh veggies.

It’s easy to throw together, endlessly customizable, and always the first dish to disappear from the table.

Ingredients

Ingredients - Corn Kernels, jalapeno, salt, garlic powder, onion powder, cream cheese, sour cream, pepper jack cheese, fritos
  • Frozen Sweet Corn Kernels – You can also use canned corn
  • Fresh Jalapenos – Deseeded and chopped. You can substitute with pickled jalapenos
  • Salt – You can use kosher salt or pink salt
  • Garlic Powder – If you are out, see The Best Garlic Powder Substitute
  • Onion Powder – See Best Onion Powder Substitutes if you are out
  • Cream Cheese – To make sure you have a creamy texture use softened room temperature cream cheese
  • Sour Cream – Greek Yogurt can be used for a low calorie variation
  • Pepper Jack Cheese – Gives the dip mixture a slight spicy flavor. Substitute with Monterey Jack Cheese, Cheddar Cheese or Mozzarella

Seasoning Variations

If you prefer, feel free to add in other spices. These are some of our recommendations. We usually add in ½ teaspoon but you can add in more to taste.

  • Paprika
  • Chili Powder
  • Cayenne Pepper
  • Cumin

How to Make Jalapeño Corn Dip

  • Step 1 – Preheat the oven to 375 degrees F and spray a 2-3 quart baking dish or pie pan with a non-stick cooking spray.

Step 2 – With a sturdy spatula or spoon stir all the ingredients together in a large bowl.

Step 3 – Press this mixture into the bottom of the baking dish or pie pan.

  • Step 4 – Bake for 30-40 minutes until the dip is bubbly and the top of the dip is golden brown. 
  • Step 5 – Remove from the oven, let it rest for at least 5 minutes and then the dip is ready to serve with Fritos and enjoy!  

Recipe Tips

  • Baking Dish – Any 2-3 quart baking dish can be used for this recipe or an 8X8 baking dish or a pie pan to make this dip in.  You can also make in a cast iron skillet.
  • Type of Cheese – Shred your own cheese for this recipe for the best flavor and results for this dip recipe. Pre-shredded cheese has added ingredients that may make the cheese not melt as well.
  • Type Corn – You can use canned corn in this recipe if you prefer. Drain all the liquid off the corn before mixing it in with the other ingredients. If you use frozen corn, you do not need to thaw it out before mixing it with the other ingredients.
