It is day 3 of our easy lunch ideas for kids. Today is a fun but super easy lunch idea- we are making Breakfast Sandwiches. Who doesn’t love breakfast for lunch? My kids have requested it several times.
You can make this is no time. Literally in no time.
Breakfast Sandwiches are perfect for the lunch box.
Now I boiled some eggs. You can learn how I bake hard boiled eggs in the oven. This is great because you can make a ton really quickly in the oven without having to watch them. Plus they won’t really crack. If you want to boil the eggs traditionally then I suggest you read up on these easy to peel eggs that the Pioneer Woman shows you how to do. I can’t wait to try this method. With 8 kiddos and a hard boiled egg loving husband, I peel a lot of eggs.
I personally love this lunchbox because I can make and assemble it the night before and place it in the fridge. All I have to do it put it in the lunchbox with a drink in the morning and lunch is done!
Equipment you need for this lunchbox:
We love these easy lunchboxes. We have used a cheaper version in the past, but I have switched to the name brand easy lunchboxes. They do a much better job and they last a lot longer. It is worth the few extra dollars for the name brand.
What I included in this lunchbox:
- 2 Hardboiled eggs cut in half
- 1 english muffin cut in half. You could use a whole english muffin. This is so they kids can make a sandwich or eat them separately. We have also added a slice of cheese a few times in here so they can add it to the lunchbox but I didn’t have any cheese.
- fresh fruit – we did a mix of watermelon, strawberries, and grapes
- Yogurt – You could put a go-gurt in there or just individual yogurts.
