Should you Sear a Pot Roast?

Honestly, it is personal preference on whether you want to sear your pot roast before adding the rest of the ingredients. Searing your meat in a skillet with a little olive oil helps bring out more flavor. However it does take an extra step and some additional time.

After searing your roast, follow the recipe as is, there is no need to adjust the cooking time.

Chuck roast, ranch dressing mix, butter, pepperoncini peppers, water

Ingredients:

  • Chuck Roast (any kind will do)
  • Packet of ranch dressing mix
  • Stick of butter (½ cup)
  • Pepperoncini Peppers with the juice
  • Water

How to Make Mississippi Pot Roast in the Crock Pot:

  • Step 1 – Place Roast – Place your roast in the bottom of your crockpot.
  • Step 2 – Top with Ranch – Sprinkle the ranch dressing mix over the roast.
  • Step 3 – Add Butter – Place the stick of butter on top of the roast and ranch mix. Pour the pepperoncini peppers and pepperoncini juice over everything.

  • Step 4 – Pour Water – Pour your water around the roast.
  • Step 5 – Cover and Cook – Cook on low for 10 hours.

  • Step 6 – Serve – Shred and then serve. Two forks make shredding the meat super simple.

How to Make Gravy for Roast:

  • Step 1 – Make Cornstarch Slurry – Mix 2 tablespoons of cornstarch (or flour) with 1 cup of cold water. Then you need to whisk it together until it is blended completely.
  • Step 2 – Add Beef Broth – Remove 2 cups of beef broth from the crockpot. Heat to a boil in a saucepan.
  • Step 3 – Whisk in Cornstarch Mixture – Whisk in the cornstarch water mixture. Then allow it to boil (while stirring constantly) until it thickens slightly. It should take about 2 minutes.
  • Step 4 – Season – Season with salt and pepper to taste. Serve immediately.

Why is my Crock Pot Roast tough?

Overcooking the roast will result in the meat being tough. You also want to ensure there is enough liquid in the crock pot.

It could also mean that the roast has not cooked long enough. Cooking time will vary depending on the size of the roast.

Is it better to cook a roast on high or low in a crock pot?

You can certainly opt to use the method best for you. However, I find that the meat is much more tender cooked on the low setting.

  • Combining Ingredients – There is no need to sear this roast. Everything gets placed in the slow cooker for an easy weeknight meal.
  • Slow Cook – I like to cook the roast on low and do not lift the lid until end of cooking time. This allows for the roast to cook tender and juicy.

Variation Ideas:

  • Cuts of Meat – This roast recipe can be made with different cuts of meat. You can use a rump roast or any type of beef roast.
  • Brown Gravy Mix – If you prefer you can add in a brown gravy mix to make a gravy with the brown. You can also add in au jus gravy mix for the perfect way to make sandwiches.
  • Vegetables – Feel free to add in vegetables to this pot roast recipe. We recommend onion, carrots, or diced up potatoes.

How to Store Leftovers:

Shred the pot roast after cooking and place in airtight container. This roast can be used for meal prep for the week. If stored in the refrigerator properly the roast will last about 4 days.

Roast also freezes great if you have a lot leftover. Store in a freezer safe container or zip lock freezer bag. It will stay fresh for up to 3 months. You can reheat in the slow cooker, Dutch oven or microwave.
