Should you sear a pot roast?
Honestly, it is personal preference on whether you want to sear your pot roast before adding the rest of the ingredients. Searing your meat in a skillet with a little olive oil helps bring out more flavor, however it does take an extra step and some additional time.
After searing your roast, follow the recipe as is, there is no need to adjust the cooking time.

My favorite roast recipe. It is so tender and the peppers add so much flavor and take it to the next level. To simplify dinner, I usually add carrots and potatoes to the bottom of the crockpot before adding the roast. It would be excellent with mashed potatoes too.
So easy and so good!! We also did them as French dip sandwiches and they were a huge hit!
All I can say is YUM!!! Whole family loves this, so long as I take out the peprocinis before they see them 🙂

This is my new ‘go to’ recipe for a good family dinner as well as for company. Very flavorful and you can serve it over mashed potatoes, rice, on a bun, or whatever new idea you can create. This is even a great tailgate sandwich. It can cook through the night, shred, and serve warm or cold on a hoagie! Mmmmm!
