Breakfast cookies

I love the idea of breakfast cookies. They are perfect for a meal on the go and you can easily change the ingredients to what you have on hand. Plus, just the name alone makes kids want to eat them. 🙂 Everyone loves cookies! However, these are healthy and gluten free.

It seems breakfast cookies have been all over Pinterest lately and I wanted to try and make some. Unfortunately, after digging a little further into some of the recipes, I found mixed reviews.

I decided to make my own recipe and the results? These cookies are amazing!

Now, truth be told, I am not a health nut. Sure, I try to eat healthy as much as the next gal, but I do not have things like flaxseed or pinenuts in my pantry.

I probably should, but I don’t. That being said, these are still cookies. They have sugar, a little butter and an egg.

They aren’t super sweet like a dessert cookie, but they are still cookies. Don’t get me wrong, these breakfast cookies are tasty.

I added cranberries, raisins and white chocolate chips. It might be good to try your favorite nuts or seeds. The sky’s the limit! Let us know how you mix it up. Enjoy!

  • 3 medium ripe Bananas, mashed
  • ¼ cup Honey
  • ½ cup Creamy Peanut Butter
  • ½ tsp Salt
  • 2 ¼ cup Quick Oats
  • ½ cup Dried Cranberries (or Raisins)

How to make breakfast cookies

First, preheat the oven to 350 degrees F.  Mix together the bananas, honey, peanut butter and salt.

Stir in the oats and the dried cranberries. Stir to combine.

Roll the dough into balls using a 2 Tbsp cookie scoop.

Place the dough on lined baking sheets, press them down slightly and bake for 12-15 minutes.

Substitution Ideas:

You can easily use what you have in these breakfast cookies. Try using natural peanut butter or crunch peanut butter instead of the creamy in the recipe.

Try using other nut butters such as almond butter instead of peanut butter.

Cranberries and raisins both work great so just use what you have. Any type of dried fruits work great in this recipe too.

I also sometimes add nuts. Pecans and walnuts taste delicious.

If you are feeling decadent, add chocolate chips. Dark chocolate and white chocolate are delicious and some of our favorites.

Other add in options include flax seed or chia seeds. You really can customize these cookies and make them your own!

As you can see, it is easy to use what you have or prefer. I like to use what is on sale or already in my pantry. 🙂

Tips for oatmeal breakfast cookies:

I highly recommend using a cookie scoop. You will thank me later because it saves so much time on spooning out each of the cookies.

Plus, they are not expensive. Amazon has some cookie scoops for very cheap. They also  look more uniform when you use a cookie scoop.

I bought the three pack, so I can use the smaller two for cookies and then the bigger one to fill up cupcakes:) They will get lots of use and you will be glad you bought them.

Easy to Freeze and Make Ahead

You can freeze the dough and enjoy homemade breakfast cookies anytime you want. You can find lots of tips here on how to freeze cookies for baking.

It is so simple! Just roll the cookies into balls like above but instead of baking them, put them on a cookie sheet in the freezer.

You want to make sure the cookies are not touching. Let the cookie dough balls freeze for about an hour and place in a freezer bag.

Now you can have cookies ready to bake anytime you are in the mood for cookies!

Another option is to bake the cookies and then freeze them. Use a freezer container and parchment paper in between each layer to keep the appearance of the cookies intact.

    I enjoyed making these but enjoyed eating them mote! Recipe can be altered with the add ins so easily. I love dried Cranberries and they’re so good for us I tried them first with the oats and added nuts.     Our family LOVES this recipe! We keep a container stocked in the freezer at all times. It makes a great breakfast-on-the-go or a healthy, filling snack. It’s easy enough for my littlest kids to help. All four of our kids love to mix up the ingredients and try new combinations. Although, we almost always add chocolate chips…because chocolate makes everything better!
