Whenever I crave the sizzling flavors of restaurant-style fajitas but want something lighter, I turn to Chicken Fajita Soup. It is packed with bold flavors with smoky chicken, peppers, onions, and Mexican-inspired spices, but in a warm, cozy bowl thatโs perfect for chilly nights and taste amazing!
I love topping it with tortilla strips, avocado, and a squeeze of lime, which makes it feel just as festive as ordering fajitas at our favorite Mexican Restaurant. Itโs a soup recipe that always gets a big thumbs-up from my family, and I know it will become one of your go-to soups, too.

Ingredients

- Olive Oil – Use oil of your choice
- Chicken Breasts – Cut into bite-size pieces. You can substitute with chicken thighs, rotisserie chicken or leftover chicken
- Onion – Slice the onion evenly
- Bell Peppers, sliced – You can use any green peppers or red bell peppers

- Fajita Seasoning – Use packet fajita seasoning or make Fajita Seasoning Recipe

- Lime – Fresh lime juice is best
- For Serving – Tortilla strips, shredded cheese, hot sauce, sour cream, avocado, cilantro, or lime wedges, optional.

How to Make Chicken Fajita Soup

Step 1 – In a large soup pot, heat olive oil over medium-high heat. Add the chicken and saute until no longer pink, about 5 minutes. Remove to a plate and set aside.

Step 2 – In the same pot, add the onion and bell peppers. Cook for about 5 minutes, until softened. Add the garlic and cook for an additional 1 minute.

Step 3 – Return the chicken to the pot. Add the diced tomatoes, chicken broth, green chiles, fajita seasoning, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes to let the flavors blend.

Step 4 – Pour in the lime juice just before serving for a fresh, tangy kick. Ladle the soup into bowls and top with tortilla strips, cheese, sour cream, avocado, cilantro, or lime wedges, as desired. Enjoy!
