If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

Ingredients

  • 2 tsp minced garlic
  • 1/2 onion diced
  • 2 stalks celery diced
  • 2 medium carrots diced
  • 1 lb dry uncooked black beans rinsed
  • 1 cup salsa
  • 1 Tbsp Chili Powder
  • 1/2 tsp Cumin
  • 4 cups vegetable or chicken broth
  • 2 cups water
  • 1 15 oz can of diced tomatoes

Instructions

  • Add all the ingredients except for the diced tomatoes to the crock pot.
  • Cover crock pot with lid, and cook on high for 6-7 hours. The beans will be soft.
  • In the last hour of the cook time, mix in the can of diced tomatoes and stir to combined.
  • Serve immediately.

I topped this with sour cream, cilantro and jalapeños. Yummy!

I cook for one and love my planned overs (they aren’t left over… I planned on eating them ?). However, like to be able to freeze soups for quick meals later.     I made this soup last week and it was delicious! Everyone asked for seconds and it was even better the next day. The only thing I added was some additional hot sauce as we all like it extra spicy . This is a really good soup and it freezes well.
