If you prefer you can follow these steps to do an optional sear on your chicken thighs.

  • Season Thighs – You can put your chicken thighs straight in the crock pot and season. Or you can rub the seasoning all over the chicken thighs. Then place in the crock pot.
  • Rubbing in the Seasoning – To help caramelize the chicken thighs, dry the chicken thighs with a paper towel. Then season them to give them extra flavor. This gives the chicken thighs the caramelize edges and absorbs better.
  • Searing Chicken – If we have the time, we will sear the chicken. We normally would just toss the seasoned chicken thighs in the crock pot. But searing just about 2 minutes really locks in the flavor. You chicken thighs will taste amazing even if you don’t sear it.
  • Flipping Chicken – For a deeper flavor of chicken, flip the chicken. This ensures both sides, get all the seasoning fill the chicken half way through cooking time.
  • Close Crock Pot – This step is not necessary but we think it just enhances the flavors of the chicken thighs. Make sure you do not keep crock pot open to long. Flip and close the slow cooker up.
