What ingredients do you need for stuffed peppers crock pot recipe?

  • Bell Peppers (any color is fine.)
  • Ground Beef
  • uncooked White Rice
  • Onion
  • Minced Garlic (or use garlic salt)
  • Tomatoes & green Chilies (like Rotel)
  • Tomato Paste
  • Brown Sugar
  • water or Chicken Broth
  • Salt and pepper

This is so simple! Just mix all of the ingredients together in a mixing bowl.

Next, put the mixture in the peppers and place in the crock pot. In just a few hours you have a delicious dinner!

You can also add a ½ cup cheese if you wish to the mixture. This is optional but tasty. And then add another ½ cup to the top in the last few minutes of cooking until cheese melts.

Note: rice needs to be slightly undercooked before it goes into the slow cooker so it doesn’t turn mushy. I like to use leftover rice that is cold.

Food Prep Tip:

We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.

If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

  1. This recipe is mixed up. Reading though all the lines prior to the actual recipe, the suggestion is to have rice partially cooked. Also, in the same area, the suggestion is to use cold cooked rice. Let’s make up my mind about this mix up.

  2. In your note you say the rice should be slightly undercooked before adding to the other ingredients. While the ingredients list uncooked rice, the directions don’t say to cook the rice before mixing with the other ingredients. But the rice is supposed to be cooked before adding, right? I don’t want to mess this up! Thanks.

    Yes, you can fully cook these, allow them to cool, wrap them with plastic wrap and freeze them. When you want to serve them, take them out and thaw/reheat them in the microwave (about 6 or 7 minutes on high for one). They will taste the same as the would have if eaten right out of the crock-pot

  4. I love this recipe. It’s super easy. Here are a few things that I have found out about this recipe. Brown your ground meat/turkey before mixing. I use uncooked rice and it comes out perfectly. I did find it a little bland at first, so the next time I cooked this I seasoned my meat before cooking. I use “Slap Ya Mama” seasoning but you can use whatever you like. I would also recommend using broth instead of water. Also, not stated in the recipe is the heat on which to cook this, it’s 3 hours on high. Seriously, I cook these almost every other week.

    Love this recipe! I used Spanish style rice instead of white rice and its delicious! I’m actually making them again right now and tossed a little Cajun seasoning in to see how that is as well.
