Dinner is a breeze when you make Crock Pot Santa Fe Chicken Recipe. Loaded with creamy chicken, beans and more, this recipe is simple to make and so tasty.
- 1 lb chicken breasts
- 2 cans canned green chilies and tomatoes
- 1 can of corn drained
- 1 can of red beans rinsed and drained
- ½ tsp black pepper
- ½ onion chopped
- 2 teaspoon minced garlic
- 1 tablespoon taco seasoning
- 1 block 8 oz cream cheese blocked
- 2 cups shredded cheddar cheese
Mix all ingredients in crockpot, except the cream cheese.
Cook on low for 6-8 hrs.
About 1 hr before serving, add in cream cheese.
Serve on crunched up tortilla chips (or cornbread) and top with cheese!
I may also shred the chicken before serving.
