These smothered burritos are always on the menu when we celebrate Cinco de Mayo or for our Game Day Gatherings. The ingredients are simple and the slow cooker does all the work. The meat is cooked tender and juicy for a crowd pleasing burrito.

How to Make Smothered Burritos in the Crock Pot

Step 1 – Add the beef, enchilada sauce, green chiles, onion, taco seasoning, salt and pepper to the crock pot.

Step 2 – Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Step 3 – Warm the refried beans in the microwave. Place a spoonful amount of refried beans on each tortilla.

Step 4 – Then top with the beef from the crock pot and sprinkle with the cheddar cheese.

Step 5 – Roll the burritos tightly. Empty all the remaining sauce from the crock pot and place the burritos in the crock pot.

Step 6 – Drizzle the sauce over the top of the burritos and cover with all the remaining shredded cheese. Cook on high for 20 minutes to warm the burritos and melt the cheese. Serve and enjoy!

- Cooking Time – Cooking time may vary depending on your slow cooker and the type of meat you use. You will know that your meat is cooked when it shreds easily.
- Filling the Tortillas – Evenly distribute the beef mixture on to each flour tortilla. Make sure to not overfill so that you are able to tightly roll the burritos.
- Shredded Cheese – For the best taste and for the best melty cheese, we recommend shredded cheese from a hunk. Pre-shredded cheese has added ingredients and may not melt as well.

These are delicious to eat. Even my finicky granddaughter eats them. I am thinking of using ground turkey meat as I am on a special diet due to my health. I will let you know how that turns out.

Can ground beef be used instead of stew meat?
I haven’t tested that but I think it would work great. I would use 2 pounds ground beef and brown and drain the ground beef before adding it to the crock pot. Let me know how it turns out!
