Crock pot smothered burritos

Mexican Monday is even better with this simple recipe for Crock Pot Smothered Burritos. The crock pot does all of the work. Come home to tender beef and more that will make amazing burritos. Yum!

This dish is slow cooked to perfection. Simply toss and go. Right before eating, you can make the burritos and melt the cheese. Easy!

I can toss this in the crock pot in the mornings before we leave for school and by the evening, it is ready. Plus, my house smells amazing.

Ingredients for crock pot smothered burritos:

  • 2 lb. Stew Meat
  • 1 can Red Enchilada sauce (28 oz.)
  • 1 can Green Chiles (4 oz.)
  • ½ onion, chopped
  • 1 tsp Taco Seasoning (Learn how to make homemade taco seasoning.)
  • ½ tsp Salt
  • ½ tsp Pepper
  • 6 Burrito Size Flour Tortillas
  • 1 Can Refried Beans, (16 oz.)
  • 2 cups Shredded Cheddar Cheese

How to make smothered burritos in the crock pot:

Note: You can also bake the burritos if you prefer.  Place them in a 9X13 dish, drizzle the enchilada sauce over the top of the burritos and then top with the shredded cheese.  Bake at 350 degrees F for 8-10 minutes until burritos are cooked through and cheese is melted.

Yes! You can substitute chicken for the beef. Just use 1.5 lbs of chicken and make sure to shred the chicken first. This is delicious and another great option for the enchiladas.

Learn how to make homemade taco seasoning. It is so simple and easy.

I keep this on hand and it makes a big batch. You will save so much money making this at home.

It is so nice not having to buy the little packets all the time at the grocery store. Plus, I love knowing exactly what is in the taco seasoning.

We also have a great meal prep tip that saves time.

We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.

If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

Use what you already have in the freezer or what is on sale that week at the grocery store.  We save a lot of money cooking based on what is on sale.

Ingredients

  • 2 lb. Stew Meat
  • 1 can Red Enchilada sauce 28 oz.
  • 1 can Green Chiles 4 oz.
  • 1/2 onion chopped
  • 1 tsp Taco Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 6 Burrito Size Flour Tortillas
  • 1 Can Refried Beans (16 oz.)
  • 2 cups Shredded Cheddar Cheese

Instructions

  • Add the beef, enchilada sauce, green chiles, onion, taco seasoning, salt and pepper to the crock pot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Warm the refried beans in the microwave.
  • Place a spoonful amount of refried beans on each tortilla.
  • Then top with the beef from the crock pot and sprinkle with the cheddar cheese.
  • Roll the burritos tightly.
  • Empty all the remaining sauce from the crock pot and place the burritos in the crock pot.
  • Drizzle the sauce over the top of the burritos and cover with all the remaining shredded cheese.
  • Cook on high for 20 minutes to warm the burritos and melt the cheese.

    Just made this last night. It’s so good. I used a Boston Butt roast instead of stew meat. Cooked it in the slow cooker till it was nice and shred-able. Heated back in slow cooker with all the ingredients except cheeses, refried beans and tortillas. I then assembled the burritos in a casserole dish. Drizzled sauce on top with cheese. baked in 350 degree oven for about 10-15 minutes. Delicious!

    My family rated this recipe a HIT, it is now in our monthly rotation. I can see many different uses for the slow cooked meat…street tacos, enchiladas, soup…etc. I substituted elk for the beef and it was perfection.
    Also, thank you for the taco seasoning mix recipe. I’ll never buy that spice mix again!

    These were soooo good and easy to make! I could not lay the 6 burritos flat in my crock pot so I had to put 3 on the bottom and 3 on the top. Made it a little tough to get the ones out of the crock pot that were on the top but I managed and we all enjoyed!! Will be making these again.
