We love adding this curry marinade to our chicken because of how flavorful the chicken gets. The marinade keeps the chicken from drying out, helps to keep it tender and allows the chicken to pack in the juices.

Variations Ideas

  • Chicken – We usually grill boneless skinless chicken breasts, but you can also use skinless chicken thighs or chicken tenders.
  • Spices – Making your homemade marinade, you can easily change the spice blend. Here are some suggestions that blend perfectly with the curry powder – red chili powder, turmeric powder, garlic, cumin and fresh ginger.
  • Yogurt – You can substitute the coconut milk with yogurt if you prefer.

How to Make Chicken Curry Marinade 

  • Step 1 – Whisk all the ingredients except for the chicken in a small mixing bowl.

  • Step 2 – All all the ingredients except for the chicken to a blender or food processor and blend until smooth.

  • Step 3 – Place the chicken in a large bowl or large zip lock bag. Pour the marinade on top of the chicken.

  • Step 4 – Refrigerate and allow it to marinade for at least 2 hours or up to 12 hours.
  • Step 5 – Then preheat your grill over medium high heat (approximately 400 degrees Fahrenheit).
  • Step 6 – Rub the grill grates with oil so that the chicken does not stick.
  • Step 7 – Place the chicken directly on the grill grate and cook for 6-7 minutes per side until the chicken reaches an internal temperature of 165 degrees F.

  • Step 8 – Remove the chicken from the grill, let the chicken rest for 5 minutes. Then the chicken is ready to slice, serve and enjoy!

Recipe Tips

  • Cooking Chicken – Use an instant-read meat thermometer to make sure that the chicken pieces is cooked to a safe temperature before removing it from the grill. Cooking time will vary.
  • Preparing Chicken – We recommend pounding the chicken about the same size to ensure it cooks evenly.
