For The Chicken
- Boneless Skinless Chicken Breasts – Filet the chicken about the same size
- Italian Seasoning – Make Homemade Italian Seasoning Recipe

- Mozzarella Cheese – We used slices but you can use shredded cheese

For the Topping
- Roma Tomatoes and Red Onion – Diced into small pieces and deseeded
- Fresh Basil – Chopped
- Olive Oil – Use oil of your choice

- Balsamic Vinegar Glaze – Gives the mixture the classic bruschetta flavor

How to Make Bruschetta Chicken

Step 1 – Heat the tablespoons of olive oil in a large pan over medium high heat. Add in the chicken breasts and season them with the Italian seasoning, garlic and salt.

Step 2 – Brown the chicken in the pan on medium high heat and until the cook is cooked through (approximately 5-6 minutes per side).

Step 3 – Top each chicken breast with a slice of fresh mozzarella cheese or sprinkle shredded cheese. Reduce the heat to low, cover and let sit for 5-7 minutes until the chicken is cooked through and the cheese is melted.

Step 4 – In a separate large bowl stir the fresh tomatoes, red onion, basil, olive oil, garlic powder, black pepper and kosher salt. Then top each chicken breast with the tomato mixture and drizzle with the balsamic glaze on top. Serve immediately and enjoy!

- 3 Boneless Skinless Chicken Breasts (cut horizontally in to make 6 filets)
- 2 tsp Italian Seasoning
- 2 tsp minced garlic
- ½ tsp salt
- 1 Tbsp Olive Oil
- 6 slices Mozzarella cheese
For the Topping:
- 4 Roma Tomatoes (diced into small pieces and deseeded)
- ¼ Red Onion (diced into small pieces)
- 4 Tbsp Fresh Basil (chopped)
- 2 Tbsp Olive Oil
- ¼ tsp Salt
- ¼ tsp Garlic Powder
- 4 tsp Balsamic Glaze
Instructions
