Tips for The Best Bruschetta Chicken

  • Cooking Chicken – Make sure your chicken gets nice and brown before you flip it. It keeps your chicken juicy and adds tons of flavor to your sauce. You want to make sure that the chicken is fully cooked by using a meat thermometer to check internal temperature. It should reach 165 degrees when it is fully cooked. You can also bake or grilled chicken instead of cooking in the skillet.
  • Preparing Chicken – Slice chicken so they are about the same size. This will ensure that the chicken cook evenly and about the same time.
  • Use Quality Ingredients – Use fresh ingredients to make the tomato mixture. It really is the star of the show so try to use great quality in season ingredients with ripe tomatoes.
  • Type of Large Skillet – We used a cast iron skillet because I love how evenly it cooks food. Cast iron is amazing.

Variations Ideas

  • Additions – Add diced avocado and a fresh squeeze lemon for an extra creamy and fresh flavor.
  • Spicy Kick – Add ¼ tsp red pepper flakes to the tomato topping for a gentle kick of flavor.
  • Pesto – For added flavor, spread pesto on the cooked chicken before adding the bruschetta topping.

I made this last night for dinner and it is so delicious! My 7 year old hates “spaghetti” (I need to try Carrie’s recipe to see how she likes that one), but she gobbled this up. Started nodding her head with big eyes when she took the first bite! Totally making this again. Hubby loved it too! We all did, a win for sure! ?
