How to Make Bacon Jalapeño Deviled Eggs

Eggs in a large pot of water with a side of crushed bacon, bowls of mustard and seasoning

Step 1 – Place the eggs in a medium saucepan and cover with cold water by about an inch. Bring the water to a boil over high heat. Once boiling, remove the pan from the heat, cover it, and let the eggs sit in the hot water for 12 minutes.

Step 2 – Drain the hot water and run cold water over the eggs to stop the cooking process. Once the eggs are cool enough to handle, peel them and cut them in half lengthwise.

Expert Tips

  • Chill Eggs – Chill the deviled eggs in the refrigerator for at least 30 minutes before serving to allow the flavors to blend together.
  • Cutting Hard Boiled Eggs – Slice the eggs with a sharp knife for a clean cut.
  • Combining the Filling Ingredients – This recipe has been tested and approved with the way it is written. If you are adding seasoning, you may want to taste it to make sure additional ingredients need to be added.

The Best Way to Peel Eggs

Peeling eggs can be tricky and choosing the best method helps to create the best egg texture.

  • Chill Eggs – Everyone has their own method to boiling eggs. But I like to place them in a ice bath after baking. This usually causes the shell to peel right off.
  • Peel at the Bottom – On the bottom of the egg there is a air pocket. I simply hit the bottom of the egg on the counter which makes it crack. Then start peeling from that air pocket. The shell will come right off.
  • Rolling Eggs on Counter – Another favorite way is to roll the eggs on the counter to crack the shell. You can then easily remove the egg shell in small or big pieces.
  • Filling Egg Whites – Feel free to spoon the yolk mixture into the egg whites. Another easy option is to use a piping bag.

Can I Make in Advance?

Yes, the way I recommend preparing these deviled eggs in advance is by boiling the eggs. You can then place in the fridge and then prepare the deviled on serving day. Prepare the hard boiled eggs no more than 3 days ahead of time to create the freshest deviled eggs.
