Recipe Notes
- Cooking Time – I use an instant read meat thermometer to make sure that the chicken is cooked through and to avoid over cooking the chicken.
- Save Time – If you are short on time, you can use chicken tenders or have the butcher cut the chicken for you.
- Prepare Seasoning – We love making Homemade Seasoning Blends which saves time and money. Prepare the seasoning blend ahead of time so you can quickly spread over the chicken.
- Use Parchment Paper – Easy cleanup and prevents sticking when lining the baking dish with parchment paper.
- Budget Friendly Tip – Double the recipe as leftovers reheat well for a quick lunch for the week.
- Spices – This is a great base recipe and you can easily adjust the seasonings based on your preference, lemon pepper seasoning is one of my favorite seasonings. For Spicy Chicken Bites add ½ teaspoon of cayenne pepper or chili powder. Garlic Butter Chicken Bites is another great variation by tossing with melted garlic butter after baking and then top with parmesan cheese.
- Change Chicken – I usually use chicken breasts for this recipe, but you can use boneless, skinless chicken thighs for this recipe.
- Sauce – If you want more sauce with this recipe, you can top the chicken with 2 tablespoons of butter or ½ cup chicken broth or chicken stock before cooking and it will create a small sauce in the bottom of the pan. We have even drizzled BBQ Sauce to make BBQ chicken bites!
