Baked Chicken Bites are one of my favorite go-to Main Dish Meals when I need something fast, affordable, and guaranteed to please everyone at the table.

They’re simple enough for busy weeknights but still feel fun, satisfying and the ingredients list is small! I love that you can season them however you like and pair them with whatever dipping sauces you have on hand. Even my picky eaters, clean their plate!

How to Make Juicy Oven Baked Chicken Bites

Step 1 – Preheat the oven to 400 degrees F.

Step 2 – Dice the chicken into approximately 1 inch bite size pieces.

Step 3 – Spread the chicken into the 9X13 pan.

Step 4 – Drizzle the olive oil on top. Sprinkle the seasonings over the chicken.  Gently toss the chicken to coat the chicken with the oil and seasonings.

Step 5 – Bake for 15-20 minutes (toss them halfway through the cooking time) until the chicken reaches an internal temperature of 165 degrees F. 

Step 6 – Remove from the oven. Let rest for at least 5 minutes. Serve with topped parsley (if using) and enjoy!

Instructions

  • Preheat the oven to 400 degrees F.

Tips for Tender, Juicy Oven Baked Chicken Bites
  • Cooking Time – I use an instant read meat thermometer to make sure that the chicken is cooked through and to avoid over cooking the chicken. 
  • Save Time – If you are short on time, you can use chicken tenders or have the butcher cut the chicken for you.
  • Prepare Seasoning – We love making Homemade Seasoning Blends which saves time and money. Prepare the seasoning blend ahead of time so you can quickly spread over the chicken.
  • Use Parchment Paper – Easy cleanup and prevents sticking when lining the baking dish with parchment paper.
  • Budget Friendly Tip – Double the recipe as leftovers reheat well for a quick lunch for the week.
Variations Ideas
  • Spices – This is a great base recipe and you can easily adjust the seasonings based on your preference, lemon pepper seasoning is one of my favorite seasonings. For Spicy Chicken Bites add ½ teaspoon of cayenne pepper or chili powder. Garlic Butter Chicken Bites is another great variation by tossing with melted garlic butter after baking and then top with parmesan cheese.
  • Change Chicken – I usually use chicken breasts for this recipe, but you can use boneless, skinless chicken thighs for this recipe. 
  • Sauce – If you want more sauce with this recipe, you can top the chicken with 2 tablespoons of butter or ½ cup chicken broth or chicken stock before cooking and it will create a small sauce in the bottom of the pan.  We have even drizzled BBQ Sauce to make BBQ chicken bites!

Can I Air Fry the Chicken Instead?

Do I Cover the Baking Dish while Baking?

In this recipe, we did not cover the chicken while baking. We like a crispy texture on the chicken. But if you prefer, you can definitely cover the pan with aluminum foil.

How to Bake Chicken Bites without Drying Out

When cooking chicken breasts, it is best to cook on high temperature for a shorter time. If you cook to long, that is what makes the chicken dry out. Always use a meat thermometer to ensure your chicken is full cooked.

How to Store Leftovers

Place the leftovers in an airtight container in the refrigerator for up to 5 days.

Can I Freeze Leftover Chicken Bites?
