Ingredients

Ingredients - mexican chorizo, potatoes, onion, eggs, salt and pepper, shredded cheese, tortillas, salsa
  • Mexican Chorizo – Feel free to substitute with your favorite breakfast meat
  • Russet Potatoes – Substitute with other types of potatoes
  • Onion – Diced into small pieces. Add in diced green bell pepper, red onion or other types of veggies for added flavor
  • Large Eggs – We used whole eggs. Substitute with egg whites or use egg substitute
  • Simple Spices – Salt and Pepper. ½ tsp of Garlic Powder would be a great addition.
  • Shredded Cheddar Cheese and Monterrey Jack Cheese – Use your favorite type of cheese. You can even substitute with plant-based cheese
  • Large Flour Tortillas – Use any type of tortilla that you prefer
  • Salsa – We even used fresh Easy Pico De Gallo

How to Make Chorizo Breakfast Burritos

Step 1 – In a large skillet over medium heat, cook the chorizo, breaking it into small pieces, until browned, about 8 minutes with a wooden spoon. Remove chorizo to a plate, leaving the drippings in the skillet.

Step 2 – Add the diced potatoes and onion to the same skillet. Cook for about 10 minutes, covered, stirring occasionally, until the potatoes are tender and golden brown in the chorizo grease.

Step 3 – Remove the potatoes from the skillet to the plate with the skillet.

Step 4 – Pour in the beaten eggs, adding salt and pepper. Cook, stirring gently, until the eggs are just set.

Step 5 – Once the eggs are scrambled, gently stir the chorizo, onions and potatoes into the eggs.

Step 6 – Warm the tortillas according to package directions to make them pliable for rolling. Layer each tortilla with the chorizo mixture, shredded cheese, and salsa. Fold in the sides, then roll up tightly burrito-style.

Step 7 –Heat a large skillet or griddle over medium high heat. Toast the burritos for 2-3 minutes on each side until golden brown.
