Variation ideas:

Chili is one of those meals that you can change it for your preference.

  • Tomatoes – Omit one can of tomatoes to lower the carbs
  • Green Chilies – Stir in a can of green chilies to a bit of spice
  • Cream Cheese – Try adding in a little bit of cream cheese before serving.
  • Sour Cream – Stir in ½ cup sour cream before the chili is completely done.
  • Meat – Try substituting ground turkey for the ground beef. You can also do 1 pound ground beef and 1 pound ground turkey. It’s a great way to save money. You can even use cooked chuck roast for a delicious variation.
  • Seasoning – We used Homemade Chili Seasoning for this recipe, but feel free to add in seasoning separately. We suggest, oregano, chili powder, black pepper, cayenne pepper, and ground cumin.

Step by Step Instructions:

Cooking the ground beef in a large pot

Step 1 – In a large stock pot, brown your ground beef or ground turkey, on the stove top. We normally do 1 pound of ground beef and one pound of ground turkey. I save money and no one can taste the difference. Drain meat after cooking.

Chopping the red bell peppers and onions on a cutting board with a knife

Step 2 – Prepare vegetables by chopping in bite size pieces on a cutting board with a knife.

Adding the cut vegetables to the ground beef in a large pot

Step 3 – Add in the ½ onion and the red bell pepper and continue cooking over medium heat until they are soft.

Combining the ingredients in a large large with a wooden spoon

Step 4 – Stir in the chili seasoning, crushed tomatoes, tomato sauce, garlic salt, and beef broth. Bring to a boil. Then turn to low, add the lid and let simmer. Be sure to stir occasionally.

  • Step 5 – Simmer for 30 minutes up to an hour to let all the flavors combine.
  • Step 6 – Serve with shredded cheese, sour cream, diced onions and even jalapenos

Expert Tips:

  • Chopping Vegetables – I use a small food chopper or processor to quickly and easily chop onions and green peppers. If you do not have one of these, I highly recommend them. They are such a time saver.
  • Prepare Vegetables Ahead of Time – I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take diced onion or bell peppers out of the freezer for recipes.
  • Cooking Keto-Friendly Chili – As you are cooking the chili, make sure to continue to stir while cooking.

How to Make in the Slow Cooker:

Occasionally I will use my crock pot to make this recipe. I just ground the beef first and put everything in the crock pot. I love meal prepping my meals and freeze them so all I have to do on the day of cooking is put in the crock pot.

Then you just cook on low for 4 hours or high for 2 hours. It’s so easy and a great way to have this meal ready and waiting after work.

How to Make in the Instant Pot:

I also like making this low carb chili in the instant pot. Everything can be done rith in the instant pot.

  • Just brown the beef in the instant pot using the saute setting.
  • Add all the ingredients and place lid on and set to sealing.
  • Next, set pressure for 5 minutes. Do a quick release and enjoy.

Using the instant pot has been a game change for my family. It is perfect to use when I forget to set something out.

Chili Topping Ideas:

You can still have some amazing toppings even if you are following a low carb diet. Here are some of my favorites:

  • Shredded cheese – Make sure you shred your own. The bag shredded cheese contains added ingredients.
  • Chopped Green Onions
  • Slice Avocado – I love avocado and really love it on chili.
  • Jalapeño Slices – I always add a few on my chili. I like the extra spice it gives.
  • Sour Cream
  • Guacamole
  • Corn Chips – Not Low Carb
  • Tortilla Chips
  • Keto Cornbread

Frequently Asked Questions:

How to Store Leftovers:

Store leftovers in an airtight container in the fridge for up to 4 days. We think the chili taste even better the next day.

Can you Freeze Low Carb Chili?

Chili is the perfect meal to freeze. I usually try and make a double batch when I make chili so I can easily freeze for another meal.
I love to freeze this chili to have for quick lunches. It’s so handy to have individual portions on the freezer.
I prefer to freeze this chili in freezer bags so I can stack them easily. It takes up less space and I can stack several bags.

Winged it with ingredients I had. I used two small cans of Rotel instead of diced tomatoes. A jar of pizza sauce instead of tomato sauce. Everything else I stuck with. Turned out great! The basil in the pizza sauce adds a little something.

Made this tonight for dinner and everyone loved it ! I’ve never had keto chili before and I certainly didn’t miss the beans & all of the carbs that come with them . I did add a few hotdogs to it and let it simmer a bit and I guess it was a chili dog in a bowl but the star of the show was the chili. This one’s a keeper and I’ll be making it again . Thanks for sharing your recipe with us.

Oh was this yummy ? I replaced 1/2 of the diced tomatoes with a spicy fire tomatoe to give a little kick. Tasted great!

I’ve made this SEVERAL times and I love to do it in my Ninja Foodie because then I only need to clean 1 dish! Love that it’s keto in order to help with carb intake! It’s absolutely delish and doesn’t take a lot of ingredients to make

My husband said this is the best dinner that he’s had in a year!! Thank you so much for this recipe. ?

  9. Sandra says:

When I added all of the ingredients to the recipe on my Carb Manager app the nutritional information came out MUCH higher in calories and carbs than your nutritional information showed. It was still delicious however, I was wondering how you figured it.

  10. Kim says:

I’m anxious to make this but not seeing the recipe for the chili seasoning. Help! Thanks so much!

  11. Dawn says:

I just entered all of these ingredients and portions on the carb manager app after I already ate a serving. According to the calculator this recipe has 25 net carbs.

  12. Jeff says:

A little misleading here – I calculated nearly 8g of carbs per serving, not 2.

  13. Niki says:

Just prepared a batch of chili. It looks great. I added all ingredients into MyFitness Pal and I’m getting 5.5 carbs per serving of 8. Would love to know which tomato paste, crushed, and seasoning you used for your chili to only equal 2.2 carbs. Thank you. Love your site.

  14. Robin says:

The Chili is amazing… Thanks for sharing but I keep getting a different carb count. I get 8. Can you tell me how you get 2 per I cup serving.. thank you.

  15. Stan says:

What kind of crushed tomatoes and sauce did you use to only have two carbs per serving?

  16. Carrie says:

Michael – I’m so sorry about that! It’s added with the crushed tomatoes. I have updated the recipe and the post. Thank you.

  17. Carrie says:

You can use chicken broth instead. I often use it if I’m out of beef broth. Thank you!

  18. Lindsay says:

Can you use chicken broth instead? Or should I definitely go buy beef? Thanks!

  19. Michael Geise says:

I didn’t actually see I the directions that you added the tomato sauce. Did I forgot to. It still turned out great.

  20. Carrie says:

    Awesome! Thanks for sharing!

Added some dark chocolate and some fermented habenero. Still simmering. So far so good. Yum!
Bought some tortilla chips for the rest of my household.

  23. Carrie says:

This makes 8 servings, so 1 serving size would be approximately 1/8 of the entire batch. Each batch can be different so it’s difficult to put a measurement on the serving size. Thank you!

  24. Shannon says:

How many servings does this make? What size is a serving?
