Step 5 – Use biscuit cutters to make the biscuits. Use a 2.5 inch or 3 inch biscuit cutter or the top of a round glass to cut the biscuits out of the dough.  Do not twist the biscuit cutter when cutting out the biscuits.  Just gently shake the cutter or glass so that the biscuit falls out.

Expert Tips

  • Cold Butter. Make sure you are using extremely cold butter in this recipe. This will result in soft and fluffy layers utilizing cold butter. Also, make sure to cut the butter into very small pieces.
  • Cold Milk. It is recommended to use cold milk because it will help to keep the butter cold as you combine the ingredients.
  • Buttermilk. You can substitute regular milk in a pinch. However, they won’t have the same flavor. It is best to use buttermilk in this recipe.
  • Utilizing Biscuit cutters. Do not twist the biscuit cutter when cutting out the biscuits.  Just gently shake the biscuit cutter or glass so that the biscuit gently falls out.  Twisting the biscuits can seal the edges and prevent them rising.
  • Baking soda and baking powder. Make sure both of these ingredients are fresh so the biscuits will rise to their full potential. You want the biscuits to be tall.
  • Mixing the batter. Do not overmix when combining the wet ingredients and dry ingredients. This will result in tough biscuits instead of ones with soft flaky layers.
