Ingredients

Ingredients needed for this recipe includes chicken breasts, brown sugar, water, oil, and spices.
  • Boneless skinless chicken breasts — the most versatile choice for this recipe. Chicken thighs give a juicier result and chicken tenders cook faster — all three work beautifully with the brown sugar sauce
  • Olive oil — for searing the chicken to a golden brown crust before adding the sauce. Any neutral oil works as a substitute
  • Brown sugar — creates the sticky sweet caramelized sauce that makes this recipe so special. Light or dark brown sugar both work — dark brown sugar gives a deeper more molasses-forward flavor. You can also learn How to Make Brown Sugar in minutes
  • Water — combined with brown sugar to create the sauce. Substitute with chicken broth for a slightly richer more savory result

Carrie’s Tip: Let the sauce rest for the full five minutes before serving. The brown sugar will continue to caramelize and thicken off the heat, creating a sticky glaze that coats the chicken perfectly.

How to Make Brown Sugar Chicken in a Skillet

Six cooked Chicken breast pieces seasoned with pepper are arranged in a stainless steel skillet.

Step 1 – In a large skillet heat oil over medium-high heat. Add in chicken. Brown both sides and season with salt and pepper (3-5 minutes per side).

A bowl of brown liquid sits on a marble countertop with a whisk beside it.

Step 2 – Stir together the brown sugar and water until well combined. Add the brown sugar mixture to the pan and bring to a boil.

Step 3 – Then reduce the heat. Cover and simmer for 10 minutes. Flipping the chicken regularly.

Step 4 – Then let the chicken and sauce sit for approximately 5 minutes to allow the sauce to thicken. Serve with your favorite sides.

Can I Bake This in the Oven Instead?

Yes! Preheat the oven to 400°F. Place the seasoned chicken in a baking dish, whisk together the brown sugar and water, and pour it evenly over the chicken.

Bake uncovered for 20-25 minutes, or until the chicken reaches 165°F. The glaze will be thinner than the skillet version, so spoon the pan sauce over the chicken before serving.

Tips for Success

  • Get the pan hot before adding the chicken. A properly preheated skillet gives you the golden sear that adds flavor to the finished dish — a lukewarm pan gives you pale steamed chicken instead
  • Do not skip the resting step. Five minutes of resting off the heat allows the brown sugar sauce to thicken into a sticky glaze — cutting this short leaves you with a thin runny sauce instead of the glossy coating you want
  • Flip the chicken regularly during simmering. Frequent flipping ensures both sides get evenly coated in the caramelizing sauce — leaving it on one side too long can cause the sugar to burn on the bottom of the pan
  • Watch the heat carefully. Brown sugar burns faster than most sauces — keep it at a gentle simmer rather than a hard boil to prevent the sauce from burning before the chicken is cooked through
  • Use chicken broth instead of water. Substituting chicken broth for the water adds a subtle savory depth that balances the sweetness of the brown sugar beautifully
  • Balance the sweetness. If you’d like the sauce a little less sweet, add a small squeeze of lemon juice or a splash of vinegar at the end. It cuts through the brown sugar without changing the texture of the glaze.

Variations and Substitutions

  • Add fresh thyme or rosemary in the last 2 minutes of cooking for an herby savory twist
  • Add a splash of soy sauce to the brown sugar mixture for a sweet and savory Asian-inspired version
  • Add a pinch of red pepper flakes for a sweet heat combination
  • Use chicken thighs instead of breasts for a juicier more forgiving result
  • Add a teaspoon of Dijon mustard to the sauce for extra depth and a slight tang
  • Substitute chicken broth for water for a richer more complex sauce
  • Add 1-2 cloves of minced garlic (or ½ teaspoon garlic powder) to the pan before adding the brown sugar mixture for a classic brown sugar garlic version.

Serving Suggestions

This chicken dinner is delicious served with Instant pot White Rice Recipe. You can freeze rice and you can make this meal even easier. I love to grab the rice from the freezer in the morning and when we come home it is all ready to reheat and serve.

Other ideas include Quick & Easy Baked Beans and Sweet Honey Corn Bread. It is also delicious with Crockpot Mashed Potatoes Recipe, Grilled Brussels Sprouts a Green Salad, Crockpot Glazed Carrots and microwaved steamed broccoli.

The brown sugar sauce tastes amazing over the rice or mashed potatoes with a ton of flavor. This meal is also good with asparagus. This oven roasted asparagus is a family favorite and it is very simple and quick to make.

Storage and Freezer Instructions

Refrigerator

  • Store in an airtight container for up to 3–4 days. The sauce thickens further in the refrigerator which is completely normal.

Freezer

  • Freeze cooked or uncooked chicken in a freezer-safe bag for up to 3 months. Thaw overnight in the refrigerator before cooking or reheating

Reheating

  • Reheat in a skillet over medium-low heat with a splash of water or chicken broth to loosen the sauce — microwave in 60-second intervals also works well

Frequently Asked Questions

How do I know when the chicken is fully cooked?

Chicken is safe to eat when the internal temperature reaches 165°F — always use a meat thermometer inserted into the thickest part of the breast to confirm doneness.

Can I use chicken thighs instead of breasts?

Yes — boneless skinless chicken thighs work great and stay slightly juicier than breasts. Use the same cook time and method.

Why is my brown sugar sauce not thickening?

Let it rest off the heat for the full 5 minutes — the sauce thickens significantly as it cools slightly. If it is still too thin return to low heat and simmer uncovered for 2–3 more minutes. If you double or scale the recipe, keep that same 1:2 ratio — using proportionally less sugar or more water than that will leave you with a thin, watery sauce that won’t thicken properly.

Can I use dark brown sugar instead of light?

Yes — dark brown sugar gives a deeper more molasses-forward flavor that pairs beautifully with the chicken. Both work equally well in this recipe.

  8. sandy says:

i just made this for a serving for 6…sauce didn’t thicken. i used 1/3 cup brown sugar & 3/4 of water like the recipe called for, very watery and no taste, probably cause it didn’t thicken and watered downed? what did i do wrong??

    1. Carrie says:

Sorry – I’m not sure what happened. Since it’s a larger serving, you would want to use a large pan or work in batches in a small pan. We simmered the chicken on low until the sauce thickened, so it’s hard know exactly why yours did not thicken. Thanks.
