Ingredients

How to Make Roasted Zucchini

  • Step 1 – Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.

Step 2 – Cut off the ends of the zucchini and quarter then lengthwise. Then dice each quarter into approximately 2 inch pieces and place them in a large mixing bowl.

  • Zucchini Slices – You can cut the zucchini how you prefer, I like bite size pieces to make it easy to serve. This also helps to cook the zucchini evenly.
  • Cooking Time – The zucchini will get soft as it cooks. If you like softer zucchini, cook closer to 20 minutes and if you prefer firm zucchini, then cook closer to 15 minutes.  
  • Baking Sheet – Line baking sheet with parchment paper or aluminum foil to help with cleanup and serving the zucchini.
