Roasted vegetables make a delicious side dish. We have made Roasted Cauliflower, Parmesan Roasted Broccoli and Oven Roasted Yellow Squash. It cooks with a golden brown texture but still have a soft texture.
Zucchini taste best in the summer but we make it often throughout the year because my whole family loves it. Make this zucchini for a full of flavor side dish.
Ingredients

- Zucchini – Cut in bite size pieces with a cutting board and a sharp knife
- Extra Virgin Olive Oil – Use oil of your choice

- Parmesan Cheese – Sprinkle the zucchini with parmesan cheese right before serving for a delicious variations.

How to Make Roasted Zucchini
- Step 1 – Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.

Step 2 – Cut off the ends of the zucchini and quarter then lengthwise. Then dice each quarter into approximately 2 inch pieces and place them in a large mixing bowl.

Step 3 – Toss the zucchini with the olive oil, Italian seasoning, salt, black pepper and garlic powder until the zucchini is well coated with the olive and seasonings in a large bowl. Spread it onto the baking sheet pan into a single layer.
- Step 4 – Bake in the preheated oven for 15-20 minutes until the zucchini is golden brown around the edges.
- Step 5 – Squeeze the lemon juice on top right before serving and enjoy!
Expert Tips
- Zucchini Slices – You can cut the zucchini how you prefer, I like bite size pieces to make it easy to serve. This also helps to cook the zucchini evenly.
- Cooking Time – The zucchini will get soft as it cooks. If you like softer zucchini, cook closer to 20 minutes and if you prefer firm zucchini, then cook closer to 15 minutes.
- Baking Sheet – Line baking sheet with parchment paper or aluminum foil to help with cleanup and serving the zucchini.
