Crock pot chicken taquitos recipe
The shredded chicken and cream cheese make an amazing combination. Not to mention the extra shredded cheese. We like to serve it with a side of Easy Spanish Rice.
It’s even easier if you keep some of this rice in the freezer for easy weeknights. It doesn’t get any easier and it’s so delicious! This meal is a family favorite and on our normal menu plan rotation.
Everyone just loves it!
Ingredients
- chicken breast – chicken thighs would be delicious too.
- cumin – Check out Best Substitute for Cumin if you are out.
- garlic powder
- chili powder
- salt and pepper
- water
- cream cheese – cubed and softened
- shredded cheese
- flour tortillas
How to make Homemade Chicken Taquitos Recipe:
First, get a small bowl and combine the cumin, garlic powder, chili powder, salt and pepper. Mix this together.
Second, put the chicken and the seasoning mixture in the crockpot. Add the water.
Next, cook on low for 4 hours. Once the chicken is finished cooking, take it out of the slow cooker and shred with 2 forks.
The chicken will be so tender and very easy to shred.
Mix the cream cheese and part of the shredded cheese with the chicken.
Keep stirring until the cheese is melted. The chicken will be warm and help the cheese to melt.
How to make chicken taquitos:
Finally, heat the tortillas up and spread the chicken mixture on each tortilla. Sprinkle with cheese and roll the tortilla up.
It is super easy and you can get the kids to help. We love to make these and the entire meal comes together very quickly without much effort.

It cooks perfectly in a 4.5 quart crock pot. That is the best size for this recipe. If you don’t already have one, Amazon has several crock pots on sale.
Now I’m all for making life easier! Use crock pot liners to make clean up a breeze. These are worth every penny and no more scrubbing crock pots clean!
This is also a really easy freezer meal. You can cook the chicken and freeze it for later. When ready to enjoy, add the cream cheese and shredded cheese to the chicken. Fix the taquitos as normal in the tortilla.
We love to double the recipe and freeze part of the chicken for another night. It does not take anymore work to do this and you have a meal ready for another night. Meal prep is such a big time saver and makes busy weeknights much easier. If you have an instant pot, you can use that to cook the chicken.
Feel free to use taco seasoning on the chicken if you prefer.

Easy Crockpot Chicken Taquitos Recipe
Ingredients
- 1 lb chicken breast
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup water
- 4 ounces cream cheese (cubed and softened)
- 3/4 cup shredded cheese
- flour tortillas
Instructions
- 1. In a small bowl, add cumin, garlic powder, chili powder, salt and pepper, mix well.
- Place chicken breast in the bottom of slow cooker. Pour the seasoning mixture and the water into crock.
- Cook on low for 4 hours.
- Remove chicken from slow cooker and shred with 2 forks.
- Mix with cream cheese and ¼ cup shredded cheese.
- Warm flour tortillas and spread a small amount of chicken mixture onto the tortillas.
- Sprinkle with remaining cheese Roll up.
- Serve with additional toppings such as sour cream, salsa and avocado.
