Instant Pot White Chicken Chili recipe has become a family favorite! My kids even request it when we are making our menu plan for the week. They barely notice the beans as they combine so well with the chicken.

I really like the fact that this soup is high in protein and dairy free because of the combination of the beans and chicken! An added bonus is that you can use canned beans, which makes this recipe even more easier! This recipe can be made dry beans as well but we recommend that you cook them prior to adding them to this chili recipe to save time.

If you only have a slow cooker, you should try out crockpot version of White Chicken Chili. Either way you cook white chicken chili, it is a wonderful combination bursting with flavor! It’s a fun way to eat chili and to try something new!

You will need an electric pressure cooker for this recipe. I personally have an Instant Pot and so far I am loving it.  You can find the Instant pot on sale here. It’s really changed dinner time around here.

Is White Chicken Chili supposed to be thick?

Yes, it is! There is something about having a think and comforting bowl of White Chicken Chili.

I love that this recipe is packed with flavors and provides my family with a warm bowl of soup when we want something different than regular chili.

Ingredients:

  • Fresh chicken breast or frozen chicken breast
  • White Beans (I used great northern beans)
  • Chicken Broth (or you can use water)
  • Onion
  • Salsa Verde
  • Garlic Salt
  • Cumin
  • Pepper
  • Optional toppings: sour cream, avocados, lime juice and Monterrey jack cheese

How to make Instant Pot White Chicken Chili:

  1. Place the chicken (can be frozen) at the bottom of the Instant Pot. I used an 8 quart Instant pot but the 6 quart size will work as well.
  2. Add everything else except the toppings to the Instant pot.
  3. Place lid and lock. Make sure the valve is set to sealing.
  4. Set the pressure to high and set the timer for 20 minutes. Cooking time may vary.
  5. Once it is finished, you can do a quick release or a natural release.
  6. Remove the chicken and shred.
  7. Add chicken back into the soup and serve with your favorite toppings.

How long to cook this recipe if using frozen chicken breasts:

I love using my instant pot because most of my recipes can be made with frozen chicken. So I can still easily get dinner done even if I forgot to let my protein thaw out- woohoo!

This white chicken chili recipe can be made with frozen chicken. If you use frozen chicken, I recommend increasing the cook time to 25 minutes (still on high pressure) with a quick release.

Everyone in my family likes different toppings on their chili. Some like our Easy Homemade Cornbread Recipe crumbled all over chili and some prefer tortilla chips.

Either way you like to eat, it’s even better with extra cheese, sour cream, green chilis and onion on top.

My personal favorite is having shredded pepper jack cheese, green chiles and tortilla chips! It gives it a little spice that I really enjoy!

How to shred the chicken?

When I make White Chicken Chili I can easily shred the cooked chicken with a stand up mixer or hand held mixer which makes this recipe so easy to get on the table for my busy family!

It saves me so much time and it is a big game changer. If you don’t have a Kitchenaid, a hand mixer will still do a great job!

How to freeze?

You could easily place all the ingredients except for the water and toppings in a freezer bag and toss in the freezer. Then just dump the ingredients still frozen into the instant pot.

You can also put the leftovers in individual containers for an easy lunch! It taste so great the next day!

Having a home cook meal that I can easily pull from my freezer keeps me from getting fast good. It saves me time, money and it taste so much better.

It’s really fun to set out a topping bar and everyone can grab their favorites. This is also a great idea for parties or to feed a crowd.

The instant pot does all the work and you can enjoy your friends and family! I have one of these ceramic caddies and I just fill each section with toppings!

Instant Pot White Bean Chicken Chili:

We love to cook once and eat twice around here! Another trick I like to do is use the leftovers and mix with tortilla chips or Doritos and top with cheese and bake! It’s an easy way to use leftovers without feeling like you are eating leftovers.

I use a small 8×8 pan and sometimes I will even use the disposable ones! My family loves this and it helps having a few simple meal ideas on the menu plan rotation.

  • 2 cans white beans (15 oz cans) I used Great Northern Beans
  • 2 cups chicken broth (or you can use water)

  • ¼ cup salsa verde
