Ingredients to make Crock Pot Lasagna Soup

Ingredients for slow cooker lasagna soup:

  • Ground beef (you can also use ground turkey)
  • Onion, diced
  • Red bell pepper, diced
  • Diced tomatoes
  • Crushed tomatoes (you can also use a combination of marinara sauce and tomato sauce)
  • Minced Garlic
  • Italian Seasoning
  • Beef Broth
  • Lasagna Noodles
  • Ricotta Cheese
  • Mozzarella Cheese
  • Parmesan Cheese

How to make crock pot lasagna soup:

  • First, brown the ground beef over medium high heat.
  • Second place the ground beef in a 6 quart crock pot.
  • Add in diced onion and red bell pepper. Pour in the crushed tomatoes and the diced tomatoes.
  • Add in seasonings.
  • Third, pour in the beef broth.
  • Then cover and cook on low for 5-6 hours.
  • Remove the lid. Break the lasagna into bite size pieces and stir in.

  • Cover and cook on high for about 30 minutes until the noodles are soft.
  • Spoon into bowls. Top with a tablespoon of ricotta cheese, and a handful of mozzarella and parmesan cheese. I also like to sprinkle with fresh basil.

Instructions

  • First brown the ground beef in a large skillet over medium high heat and drain off the excess grease.
  • Then place the ground beef into a 6 quart crock pot.
  • Add in the diced onion and red bell pepper. Pour in the crushed tomatoes and the diced tomatoes.
  • Add in seasonings.
  • Pour in the beef broth.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Remove the lid. Break the lasagna noodles into bite size pieces and stir them in. I break them in over the crock pot so all the small pieces will fall directly into the crock pot.
  • Cover and cook on high for 30-45 minutes until the noodles are cooked through.
  • Spoon into bowls. Top with a tablespoon of ricotta cheese, and a handful of mozzarella and the shredded parmesan cheese.

    Kristen – It’s hard to put an exact size on it. Generally is approximately 1 1/2 cups but each batch is different.

    It’s hard to know without see it but I’m thinking it’s likely coagulated proteins that form pockets and rise to the surface of the soup. This is normal and fine to each or you can remove them or stir them back into the soup.

    Yes can freeze the leftovers. Watch it closely when re-heating so that the noodles don’t get too soft.

    I think it would be delicious with fresh spinach mixed it but I would just put it in the crock pot for the last 30 minutes of the cook time so that the spinach does not get over cooked.

    YES!!! I have been waiting to make this soup after trying some at a lunch spot with my MIL. I have made other recipes from this site, so I thought I would give this a try. I am so glad I did!     It’s been rainy and cold for over a week and my hubby suggested making this again for this weekend. I made this earlier in the year during a cold spell. This soup is so good and so easy to make! My favorite part is topping this with the cheeses. (We use cottage cheese in place for ricotta.) But all in all, I love this soup!!

    I will definitely be making this again, it was a big hit with hubby. The only change I reccomend is using half the amount of noodles suggested. They swelled up and it was not like soup, just too much noodles.

    Crockpot Lasagna soup is the A Bomb of soups. Easy to make and very enjoyable to the taste buds. Combine with a simple salad and cheesy garlic bread; you’re good to go.

    I made this for dinner tonight and let me say I will NEVER bug a precooked lasagna from the store I figured out how to make this thick like a regular lasagna or thin like a soup/stew. This was SO easy and VERY delicious.
